I need a sauce for tuna steaks any ideas?!


Question: Grilled Tuna with Spiced Butter

4 Tuna Steaks (fillets)
-approximately 8 oz each
1 c Unsalted butter
2 tb Minced Cilantro
1 ts Jalapeno or serrano chili
-peppers, finely minced
2 ts Garlic, finely minced
1 ts Ginger, finely minced or
-ginger powder

Instructions:
Place softened butter in mixing bowl and beat till fluffy.
Blend in the cilantro, chili, garlic, and ginger. Spoon
dollops of butter mixture onto waxed paper and refrigerate
ahead of time for readied individual servings. Refrigerate.

Place fish on rack 3 inches from mesquite coals. Grill fish
about 4 to 5 minutes on each side. Place dollops of spiced
butter on the finished fillet, or warm the spiced butter and
spoon over the cooked steaks.

Mix together wasabi paste or wasabi powder with a good quality mayonnaise. Use homemade mayo if you can manage it. Call it wasabi aioli for that gourmet touch, and sprinkle a little chopped parsley around the plates.

Tomato, Red Onion, Chilli & Black Olive dressing. Served cold. like a little relish. Tastes great...

Bearnaise is THE BEST sauce for tuna and swordfish.

Title: Rhubarb Steak Sauce
Categories:
Yield: 7 Cups

8 c Chopped rhubarb
4 c Chopped onion
2 c Vinegar
2 1/3 c Packed brown sugar
1 ts Cinnamon
1 ts Allspice
1/2 ts Cloves
1 ts Salt
1/2 ts Pepper

Combine and bring to a boil. Reduce heat; simmer 1
hour or until thickened. Cool. Store in
refrigerat

Just coat the tuna steaks in sesame seeds, cook then drizzle some sort of ginger/soy marinade on top when finished cooking!

A light garlic and mint sauce is great for tuna,

Tuna Steaks and Onion Cream

1tbs groundnut oil
1/2 cup chopped onions
1 clove garlic
1 cup dry white wine
1/4 cup whipping cream
1/3 cup fish stock or clam juice
2 tuna steaks, 3/4 inch thick.

heat oil. saute onions and garlic. add wine increase heat to high and cook until liquid is reduced to about 2 tbs. add cream and fish stock. cook for about 4 Min's until it has slightly thickened. season with salt and pepper. Season tuna with salt and pepper and grill for 4 minutes each side. Transfer to plates and pour sauce over.

I made this for the first time a couple of years ago and now only eat tuna this way.

I would have to say that because Tuna is so mild in flavor, use a sauce that is very bold....some of those might include ginger, soy, scallions, citrus, etc.

I used this as a dipping sauce last night for grilled ahi tuna steaks. My husband and kids raved about it.

2/3 cup soy sauce
about 2 tablespoons brown sugar
1/4 tsp of ground ginger or more to taste
fresh ground pepper to taste
1/3 cup light oil (I used canola)

Wisk together. Taste and adjust to your taste by adding more brown sugar, ginger or pepper. Brush on the steaks while grilling and serve the rest in small bowls as a dipping sauce. You could also add a little wasabi if you want it spicier.

Seared tuna steak with olive oil and lemon crushed potatoes


Serves 1



Preparation time less than 30 mins

Cooking time 10 to 30 mins







Ingredients
? tuna steak
salt
freshly ground black pepper
2 tbsp olive oil
For the potatoes
? potato, diced
1 lemon, juice only
2 tbsp olive oil
1 tbsp chopped chives and parsley
For the viniagrette
1 tomato, finely diced
? lemon, juice only
? leek, finely chopped
? pack mushrooms, finely sliced
4 tbsp olive oil
1 tsp dijon mustard
salt
freshly ground black pepper



Method
1. Boil the potato in plenty of boiling, salted water. Drain well and return to the pan.
2. Stir in the other potato ingredients, slightly breaking up the potato dice but not mashing them.
3. Gently soften the chopped leeks in one tablespoon of olive oil.
4. Add them to a bowl along with all the other vinaigrette ingredients.
5. Stir through to mix and coat all the ingredients.
6. Season the tuna with plenty of salt and black pepper.
7. Sear in a hot pan for 1-2 minutes on each side so that it is still slightly pink in the middle.
8. Put the potato in a chef's ring to give it some shape and remove.
9. Serve the tuna on top and pour over the vinaigrette.

please dont eat tuna it stinks its for cats
