I make homemade fries all the time and I will share my favorites. You can use either the russet potato, gold or red potatoes. I don't suggest white ones. Cut the peels off or leave them on.Cut into fries. Wash them and drain as much of the water off as you can then season them with lots of season salt. The salt makes the water come out of them so after you salt them drain again. Then flour them and fry in hot oil. (Peanut, veggie or canola) Salt again as soon as they come out of the oil.
If you don't want them battered but want a crunchier fried potato then here is the secret to a crunchie potato. Peel or not and cut into fries then wash and pat them dry. Fry them on medium-high heat but do not let them brown. Take them out of the oil and let them completely cool. Then once they are cool then turn your heat on and get your oil very hot and fry them until they are brown. Take them out and drain on paper towels and salt them while they are hot. They will be much more crispy than if you just fried them until they browned from the beginning.
