What kinds of seasonings would be good to mix in with fresh sausage?!


Question: I just bought a hog and had it made into sausage but I didn't have anything other than salt and pepper mixed into the meat. At the store fresh sausage always has some good things in them. Any Idea what they are?

Sage, Thyme and Rosemarry. You can make a small amount w/each and then try combos. But it wont last as long as store bought sausage, because of the nitrates that the processing plant uses. make a little of each, see what you like best and then make a big batch.

My grandma always made fresh breakfast sausage with apples (finley diced) and onion in it, not too much, but just enough for the flavor.

You could add some maple syrup to some as well....

Basil and garlic to make Polish style sausage. Oregano, fennel and pepper to make Italian sausage. Breadcrumbs and pepper to make Bratwurst. Thyme and savory to make English sausage. Rosemary and oregano to make Greek Sausage.

Sage is one of the things in it.

ground sage, greek seasonings, cajun seasonings,

yes - pepper, garlic, orange peel, fennel seeds, etc.

Just put what you like.

Sage and rosemary. I would use ground on both of them. Poultry seasoning, I know pork is not poutlry but it is good seasoning for any white meat product.

Try jerk seasoning!!
