When baking veal parmigiana do I turn the veal or cover it?!

Best way I've ever seen it made:

Set the veal, with the sauce, and cheese already on it in a baking pan, about 2' deep.
Cover the baking pan with a layer of plastic wrap, and on top of that a layer of foil: this will ensure that ALL of the moisture is locked in.
And bake! This is how we used to make it in resturants. But then again we had industrial sized ovens... might take you a little longer then 10 min to cook.

I saute the veal first. This is enough to cook the veal. Baking is just to melt the cheese and brown it. No turning or covering required. YUMMY!!!

IF you have any leftovers, you can cover them. The cutlets make excellent sandwiches.

Saute the veal cutlet first in a little olive oil just enough to brown it (veal cooks quickly) then add the tomato sauce and cheese nd just put it under the broiler (if you have one in your oven) to let the cheese melt and lightly brown.
