Italian Cream Cake
INGREDIENTS
1/2 cup margarine, softened
1/2 cup shortening
2 cups white sugar
5 egg yolks
2 cups all-purpose flour
1 teaspoon baking soda
1 cup buttermilk
1 teaspoon vanilla extract
1 1/3 cups flaked coconut
1 cup chopped pecans
5 egg whites
8 ounces cream cheese
1/2 cup margarine, softened
4 cups confectioners' sugar
1 teaspoon vanilla extract
1/2 cup chopped pecans
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 8 inch round cake pans.
Beat egg whites until they form stiff peaks.
In a large bowl, cream 1/2 cup margarine and shortening till light. Add white sugar, and beat till fluffy. Beat in egg yolks. Stir together flour and baking soda, and add alternately with buttermilk into the creamed mixture; mix well after each addition. Stir in 1 teaspoon vanilla, coconut, and 1 cup pecans. Fold in stiffly beaten egg whites. Spoon into prepared pans.
Bake for 25 to 40 minutes. Cool in pans for 10 minutes. Remove to wire rack to cool completely.
Combine cream cheese, 1/2 cup margarine, confectioners' sugar, and 1 teaspoon vanilla in mixer bowl. Beat till smooth. Add coconut if desired. Frost the cooled cake. The remaining 1/2 cup pecans can be stirred into frosting or sprinkled onto the cake after it is frosted
5 layer chocolate cake! You can make in coconut(white Duncan Hines moist deluxe mix) or yellow what ever flavor you want. He just asks for the chocolate. Make this a few days ahead. If you can but it's fine if you can't. http://images.search.yahoo.com/search/im...
You will not be able to tell it's boxed! I make one every January for my son. You need 2 boxes of Duncan Hines Moist Deluxe, (1 butter recipe fudge & 1 dark chocolate fudge or any 2 chocolates flavors) use margarine in place of the oil, 2 big glops of mayo or miracle whip and a large box of chocolate pudding(pour it in dry!) Follow direction on the back except make the changes I mentioned. Just divide it into 5 round paper lined pans instead of 4. Bake it, and immediately put int in the freezer while it's hot. Let it freeze hard it will take almost 2 days. Take it out the morning of the birthday. Ice it while its frozen, it locks all the moisture in!!!!. This is so tall I can't get it in my huge Tupperware cake holder!

Strawberry shortcake! Buy a box of white cake (not angel food cake- yuck), strawberry jello, cool whip, and frozen strawberries that come in syrup.
Make the cake (directions on back of box). Once it has cooled, make the jello but don't refrigerate it. Poke holes in the cake and pour the liquid jello into the holes. Add cool whip as the cake's frosting and top with thawed strawberries.

1 can cherry pie filling
2 eggs
1TSP.almond extract
1 box chocolate fudge cake mix (18 OZ)
INSTRUCTIONS
Mix together eggs, extract and cake mix.Gently fold in cherry pie filling with wooden spoon.Be careful not to mash the cherries.Dough will be very thick.
FROSTING INGREDIENTS
1 cup sugar

5 TBS. butter boil
1 minute,
ADD
6 oz. Chocolate clips.Mix, soon as smooth, spread on cake.
