here's one I use you could use chopped tomatoes and licqudise them before you add it to the pot instead of using Passata

ITALIAN TOMATO SAUCE

? Onion (chopped)
1oz Bacon (chopped)
2oz Mushrooms (sliced)
2oz Mixed Peppers (chopped)
1 carton of Passata
1 Italian Stock cube or 1-2 tsp Oregano
1 tsp Garlic

Gently fry the onion with the garlic, Add the bacon and fry for a few mins
Add the rest of the ingredients and bring to the boil. Simmer for 10-15 mins

too bad you don't like chunks of tomato, because you should start with a can of peeled tomatoes. In any case, PLEASE don't put sugar in it. I don't know why people do that.

8 lb tomatos
2 lb sugar
6 tspn salt
1/2 tspn cayenne pepper
1 lb apples
2or3 onions (depending on size)
2 pints spice vinegar
2 tspn ground cloves
2 tspn white pepper

Boil together for 3 hours until thick. strain (with a forcing strainer) and bottle in serilised bottles.

sorry its so big but this is mums recipe, it is great sauce!

i guess you could start by running your fresh roma tomatoes thru a food processor. meanwhile, get some chopped onions and garlic going in some xv olive oil. when done to your liking, add the toms with some coarsely chopped fresh basil. stir. you're done.

? cup Extra-virgin olive oil
4 Cloves garlic
4 can Plum tomatoes; (28 ounces each), drained, coarsely chopped
? cup Balsamic vinegar
? cup Parsley; coarsely chopped
? cup Basil leaves; torn in half
2 teaspoon Dried oregano
Salt and freshly ground black pepper; to taste
1 Pinches sugar

Heat the oil in a large, heavy pot over medium-low heat. Add the garlic and cook until it colors slightly but does not burn, about 3 to 4 minutes. Remove from the heat and carefully stir in the tomatoes and the wine. Return the pot to medium heat. Stir in the parsley, basil, oregano, salt, pepper and sugar. Simmer uncovered, stirring occasionally,

what I do is put a can of diced tomatoes with the juice in the blender and blend til I get the consistency I want
