Help!!! I need simple recipes for diced pork???!


Question: I need HELP! I have 1lb. of diced pork but don't know what to do with it... since my husband is a picky eater and doesn't like vegetables or a heavy garlic taste to it. I need help in figuring out what can I do for dinner w/this things:
1lb diced pork
carrots
can of vegetables
rice
salt and pepper
garlic
onion
tomatoes
bacon

If you have chicken stock or broth, Bay leaf, cumin, garlic, cilantro, salt and pepper you could make carnitas. Its really good. You can find the recipe at www.allrecipes.com and they are incredible. You could also save
www.recipezaar.com to your favorites and they have an ingredient search. You type in the ingredients you have on hand and it will pull up recipes for what you have on hand....and most people have more on hand than what they have listed so you might find something you would have never thought of yourself. For example I am sure you have Flour and sugar at home too...maybe even milk and butter.

If you don't have the above mentioned ingredients to make carnitas, maybe you could brown the pork in a frying pan, remove the cooked meat from the skillet. add about 3 tablespoons flour and 3 tablespoons butter and cook for about a minute, then add chicken broth, milk, or stock and bring to a boil, put the meat back in and serve over rice.... At least that is something I would try to do. If that doesnt sound good maybe you could make a soup out of it using the bacon and canned vegetables as the background of a soup....Just some ideas. I would saute some carrot and onions and cook up your pork. Fry some bacon till crispy and crumble. Add the carrots, onions, bacon, and tomatoes and whatever seasoning you like to the pork and cook till the tomatos are done. Serve over some rice. I think this will make a good skillet meal :)

pork fried rice comes to mind , mix some eggs + bacon in there . pork + black beans is good also { saute some onion in there w/ it }

DICE PORK WITH PEAS AND POTATOES

Diced pork
Peas & juice
Potatoes
Onions
Olive oil
Salt & pepper

Heat olive oil with cover on. Fry onions with cover on. Add diced pork with cover on then after pork is 1/2 cooked, add peas and juice, still with cover on. Add diced potatoes. (Keep cover on at all times.)
