Why not try ground chicken meat in your favourite ground beef meatloaf recipe? It will be a little dryer, but will taste great, because it's a recipe you are familiar with.
Greetings from Toronto, Ontario, Canada, where we are getting 20cm of snow tonight!!
Chicken meatloaf
2 lbs ground chicken
1 egg
1/2 cup grated parmesan cheese
1-1/2 tsp garlic powder
1/4 cup dried chopped onion
1/2 cup Italian bread crumbs
1/2 cup ketchup
1/4 cup honey (or brown sugar)
Directions
Preheat oven to 350.
In a medium bowl, combine ground chicken and egg.
In a separate small bowl, combine cheese, garlic, onion and crumbs.
Add seasoning mixture to the ground chicken. Mix well (I use my hands).
Pat the mixture into a shallow rectangular baking dish. Bake for 40 minutes.
In the meantime, combine ketchup and honey in a small bowl and mix well. During the last 10 minutes of baking time, spread ketchup mixture over the meat.
