I am making beef roulades with italian sausage, can these be made ahead of time?!

Question: Yes! Just like pot roast and beef stew, beef roulades even taste better the next day, because the flavors blend and permeate the meat.

If the roulades are braised, i.e. cooked in a good amount of liquid until fully cooked and tender, then they should reheat well.

you mean bragioli? depends what your ingredients are. If there's raw egg i would make it the day of. If there isn't then you're good to go : )
