Are there any uses for potato peels as a food or dish?!

I cut my skins with a knife instead of a peeler so they have a bit more meat on them. Then I fry them, salt and pepper them and then top them with ranch dressing and bacon bits. I love it. You can use the ends of carrots and celery for flavor in the cavity of a roasted bird and in chicken stock. Just remove them before serving. Boiling orange peels and apple cores gives a good fragrance. I like using apple and cinnamon. I cannot think of any other use for onion skins. All are good for compost as well.

There are no good uses for food. Use them as mulch in your garden. They'll replenish the nitrogen in the soil.

i use my peels in with mashed potatoes

potato skins are actually good in mashed potatoes; you just cut up the potatoes with the peels on and mash them (my mom makes them like that all the time).

You can also make fried potato skins...

INGREDIENTS:
4 large baking potatoes, scrubbed
salt
pepper
oil for deep frying
sour cream mixed with chives, optional
shredded cheese, optional
cooked bacon, crumbled, optional

PREPARATION:
Prick potatoes in several places with a fork; bake in a 400° oven until tender, about 1 hour.
Remove, cool slightly, and cut in halves lengthwise. Scoop out potatoes and refrigerate for another meal or casserole topping. Cut skins in half again.

Heat oil in a deep fryer to 375°. Place potato skins in deep fryer basket; lower into oil and deep fry for about 2 to 3 minutes, or until skins are browned and crisp.

Transfer potato skins to paper towels to drain. Sprinkle with salt and pepper. Serve with sour cream and chives, if desired, or top with cheese and place under the broiler to melt.


Orange rinds can be used in Orange Marmalade...

Ingredients:
6 large oranges
2 lemons
1 1/2 quarts water
Sugar

Directions:
Cut orange peels from peeled oranges into very thin slices. Cut up the pulp. Slice the lemons very thinly. Combine fruit in large pot and add water. Bring to boil and allow to simmer, about 10 minutes; in a cool place let stand overnight. Bring to boil again rapidly cook until peel is tender. Measure the fruit and liquid. For each cup of undrained fruit measure 3/4 cup sugar and add to fruit. Hat and stir until all sugar is dissolved, then cook it rapidly for about 30 minutes. Pour into hot sterile jars and seal.

makes about 3 pints

Though it is bitter, orange peels are edible. You can use a "zester" and add orange peel to a variety of deserts and main dishes for added flavor. Potato peels are great fried or baked and add what you like on stuffed baked. Apple cores are only good if you are making cider, use the whole apple for that. Onion skins are just mulch.

citrus peels can be grated and used fresh or dried in many recipes for baking

composting those things is a good way to make "food" for your garden...

Orange and Lemon peels are used in marmalades ..you can deep fry potato skins...and serve them with a sour cream/chive dip

I take those bits and make soup stock out of them

When I make potato salad, I bake the potatoes. When they have cooled, I peel them, saving the peelings to deep fat fry like french fries. You can top them with grated cheese or dip them in ketchup if you want.

I lived in Arizona years ago and we would actually fry them [like french fries] and season them....You can use orange peel to garnish foods [they need to be grated very finely]. The rest of the stuff you suggested I'd probably feed to the birds, or throw away.
