or belinies... (tiny pancake things)

Bruschetta with the salmon, sun dried tomatoes and capers

In case everything goes according to plan, if you know what I mean, save a couple of slices for breakfast in bed together in the morning. Cut it up in some scrambled egg. Serve on wholemeal toast and with orange juice and coffee. Garnish the tray with a single red rose.

SMOKED SALMON SALAD:

2 cups smoked salmon
1 cup diced celery
1/4 cup sweet onion
4 Oz's sweet pickle relish
1 head Iceberg lettuce
French salad dressing

Look the salmon over carefully, removing any skin or small bones. Break into medium size pieces and mix with the
celery,onion,relish and the French dressing and marinate this for at least 30 min.
Drain the mixture. Pour over chopped lettuce and serve with a Raspberry Vinaigrette dressing , garish with tomato slices

This serves 4 people.
Great as left over , next day lunch

Just thin slices of toast, slices of smoked salmon and lemon wedges - oh, and champagne!

I'm italian, sorry for my english, I make the smoked salmon on the dish whit oil, lemon, salt and pepper, then i cut to pieces the parmesan. It's very good!

a simple smoked salmon salad with horseradish dressing and brown bread, keep it simple and easy.

Smoked Salmon & Avocado

2 ripe avocados
1 lemon , juice only
250g pack smoked salmon
small handful tarragon , leaves only, chopped
4 tbsp crème fra?che
1 tbsp capers , drained
wholemeal or soda bread , to serve

Stone and peel the avocados, cut into chunks and toss in half the lemon juice. Twist and fold the smoked salmon pieces onto serving plates, then scatter with the avocado. Cover and chill for up to 1 hr until ready to serve.
Mix together the tarragon, crème fra?che and remaining lemon juice. Drizzle over the salmon, scatter with the capers and serve straight away with wholemeal or soda bread.
