Last minute Valentine's Day Potluck ideas?!
Answers: I've got a potluck tomorrow at work and the best that I can come up with is place and bake cookies. Any ideas for something fast, but different?
My grocery store sells some melt-and-dip chocolate and caramel in little tubs (like the large-size margarine tubs) in the fruit section -- if you can get some, and then some fruit and angel-food cake (again, my store has it already made in the bakery), cut everything up and microwave the dip and voila! Fondue!
yes pigs in blankets take little smokies and get some crescent rolls, roll the triangles of dough around the wienies, bake the night before or in the morning before work or at work if there is an oven available. another idea would be microwave velveeta cheese and a jar of medium hot salsa together and serve with a bag of chips...
Big Orange Salad
1 large can crushed pineapple, drained
1 large package orange Jell-o
1 large frozen Cool Whip
2 cups miniature marshmallows
1 pound carton cottage cheese
Mix pineapple and dry Jell-o. Stir until dissolved. Add marshmallows and cottage cheese. Fold in cool whip. Place in pretty bowl or 9x13 glass dish. Refrigerate for at least 2 hours.

Mock Bok Choy Cabbage Salad
3 oz ramen noodle soup mix - Oriental flavor
2 tbsp. sunflower seeds
1/4 cup cider vinegar
1/3 cup vegetable or canola oil
2 1/2 tbsp. sugar (splenda is ok)
1 bag coleslaw mix (with carrots)
1/4 cup sliced almonds
5-6 green onions, sliced (green and white separated)
Remove flavor pack from soup, set aside. Break ramen noodles into pieces and place on lightly greased baking pan. Add sunflower seeds, bake at 350oF for 5-8 min or until toasted, stirring occasionally.
Whisk flavor pack, oil, vinegar and sugar in a jar until blended. Chill at least one hour.
Place coleslaw mix in a large bowl, add sliced onion bulbs (white part).
About 1 hour before serving, mix dressing into coleslaw mix. Place noodles around the outside edge of cabbage, top center with almonds and onion greens. (Makes a nice presentation, but for our family I just sprinkle all of the above on top).
(If you need a large quantity, use the big bag of coleslaw mix from Sams and doubled the other ingredients .)
This is an alternate dressing not using the flavor pack:
3/4 cup oil
3/4 cup sugar
1/2 cup cider vinegar
2 tsp. soy sauce
pepper to taste
Combine and chill before serving.

Almond-Orange Salad
3 heads romaine, washed, cleaned, veins removed, chopped
? cup slivered almonds, lightly toasted
2 oranges, sectioned, reserve juice
Dressing:
? cup mild vegetable oil
1/3 cup cider vinegar
? tsp. Dijon mustard
3/4 tsp. kosher salt, or to taste
? tsp. black pepper, or to taste
? tsp. almond extract
Reserved orange juice from sectioning oranges
In large bowl, toss together lettuce and oranges. Mix dressing in jar by shaking, or in measuring cup with whisk. Dress salad greens/oranges and toss. Sprinkle on slivered almonds, toss again lightly. Serve immediately.

something with tomatoes and red peppers!
you can buy both roasted tomatoes and roasted red bell peppers already in a jar!
a little salt, pepper, garlic, olive oil, maybe some parmesan cheese... drain and chop the tomatoes and peppers... toss w/ some cooked pasta (the bite sized kind like penne, farfalle, rigatoni, rotini...)
can be hot, can be cold, can be room temp.
room temp stuff is great for potlucks!
super fast, just a quick run to the store for the appropriate amounts of tomato, peppers, and pasta (surely you have the other stuff already)... by the time the pasta is boiled, all the other stuff is ready and waiting in the bowl!
I love the people who have no clue and say anything or give u some crap answer.
Just buy 3 types of bagels, 3 types of whipped cream cheese and make nice platters, will be a hit for sure.
Or buy 5 different fruits, cut up, sprinkle with lemon juice and let them attack it.
