When making yogurt, do you need to occasionally "freshen the gene pool"?!
Answers: We just started making our own yogurt, and love it. We used store bought yogurt as our starter. What I'm wondering is, do we need to occasionally "freshen the gene pool" by introducing some new active culture? And if so, how often would you recommend?
My wife and I make yogurt. Sometimes it starts to get a funny "yeasty" taste, or it stays at a milk consistency. When that happens, we get a new starter.
I'm not sure how often to do that; maybe every three or four times you make yogurt. But it probably varies depending on the amount you're making and the consistency and taste you like. I've noticed that the larger the quanities you make the more it seems to increase the odds that the culture is going to stay "good." You probably wouldn't want to make more than you can use, though.

You don't have to do anything. Just fill a dish with milk....add a scoop of yogurt and stir it up....cover it. Leave it out on the counter over night and you will have yogurt
