There are typically three ingredients in shortbread; sugar, flour and butter. Shortbread is based entirely on butter for its flavor; the other two ingredients are there for sweetness and to keep it from running all over the oven! Margarine is a poor substitution in this case, not only because your shortbread will be a sickly yellow and have that nauseating fake-butter smell, but also because of its water content. Apple sauce is a great substitute for butter in complex recipes that rely on other ingredients for structure (like eggs) but in this case would be a complete disaster! You really should just bite the bullet and go get butter, I hate to tell you.

You can also use margarine if you have it, or an equal amount of applesauce. However, since you are making shortbread cookies, I would advice getting real butter, otherwise your cookies won't turn out well.
