HELP!! I need a meal idea for V-Day dinner.?!
Answers: The only meats I have on hand are chicken breasts and pork chops, I have no way out before dinner to get anything else. Can you please give me some romantic or delicious recipes for these, and maybe some side items to go with them. Thanks!
Mushroom Chicken Saute for Two
1 t. olive oil, divided
1 T. butter or margarine, divided
2 skinned and boned chicken breast halves
Salt and pepper
8 oz. (about 3 cups) mushroom pieces (choose one or more from button, crimini, oyster, and shiitake)
2 green onions with tops, sliced
1/3 C. dry white wine
Heat half the olive oil and half the butter in 10-inch nonstick skillet over medium heat. Season chicken with salt and pepper; add to skillet. Cover and saute, turning once, until juices run clear, 10 to 15 minutes; remove and keep hot. Add rest of oil and butter to skillet over medium-high heat. Add mushrooms. Cook and toss 5 to 7 minutes until golden. Add onions and wine; cook 3 minutes. Season with salt and pepper. Spoon mixture over chicken.
Yield: 2 servings
Pecan-Stuffed Pork Chops
2 pork chops, 1-inch thick or more
1/4 cup fresh bread crumbs
1/4 cup finely chopped onion
1/4 cup minced apple
1/4 cup chopped pecans
1 small garlic clove, minced
2 tablespoons minced fresh parsley
dash black pepper
dash cayenne
1/4 teaspoon ground mustard
dash ground cumin
1 tablespoon vegetable oil
1/4 cup chicken broth
1/4 cup dry white wine
1 small bay leaf
Trim pork chops of excess fat; make a pocket in each by cutting horizontally through to the bone.
Combine bread crumbs, onion, apple, pecans, garlic, parsley, cayenne, pepper, mustard, cumin and oil; mix well. Divide the mixture and fill each pocket with as much stuffing as possible.
Place chops in a greased baking dish. Pour the broth and wine over them and add the bay leaf. Add leftover stuffing if there is any. Cover and bake about 1 hour or until tender, basting occasionally with pan juices. Serve with juices, over rice or with potatoes.
Serves 2.

I was told that this is a relatively easy recipe to prepare that is sure to impress. The key is to make sure to remove the beef from the pan early enough so as to not overcook it. If necessary, you can prepare the sauce ahead of time, and reheat it after cooking the beef.
1 10-12 oz beef tenderloin
coarse salt and pepper
2-3 tablespoons butter
1-2 large shallots (about 1/3 cup), minced
3/4 cup sliced mushrooms
1/2 tablespoon sugar
1/2 tablespoon red wine vinegar
2 large garlic cloves, minced
1/2 teaspoon thyme
1/2 teaspoon rosemary
1/2 tablespoon flour
3/4 cup beef broth
3/4 cup good quality dry red wine
Preparation:
Start by cutting the tenderloin into 6 equal pieces, then flatten each piece using a mallet or heavy weight until each piece is 1/4 inch thick. Season with the salt and pepper.
In a medium skillet, melt a tablespooon of butter over med-high heat. Add the beef, in batches if necessary, and saute until outside is brown but inside is still very pink, about 2 minutes on each side.
Add remaining butter to skillet, and when melted, add mushrooms and shallots. Saute until tender, about 10 minutes. Sprinkle the sugar over the mixture, and cook until deep brown, about 4 minutes longer. Add vinegar, garlic, herbs, and flour and stir one minute, until liquid is absorbed. Add broth and wine, and bring to a boil. Cook until liquid is thickened and reduced to about 1/2 cup.
Return beef to the pan, and heat through, about 1 minute. Arrange beef on plate and spoon sauce and mushrooms over.

Here's two recipes which were a hit here. They are for two, so adjust as you need.
Baked Sweet Potatoes and Pork Chops
Serves 2
2 pork loin chops -- cut 3/4-inch thick
1 tablespoon butter or olive oil
salt and pepper to taste
2/3 cup cooked mashed fresh sweet potatoes
1/3 of an 8-ounce can crushed pineapple-- drained, reserve liquid
1 tablespoon maple syrup
1 pinch of cinnamon
Preheat oven to 350 degrees.
In a skillet over medium high heat, melt butter or heat olive oil. Brown pork chops over medium heat, salting and peppering to taste. Place chops in a 13 x 9 inch baking dish. Combine sweet potatoes, pineapple, maple syrup, cinnamon and a little more salt and pepper and mix well. Spoon this mixture onto the chops. Pour remaining pineapple liquid into pan and bake uncovered for 25-30 minutes or until everything is hot and heated thoroughly.
Serve with broccoli, and salad.

Madison County Chicken
Serves 2
2 boneless skinless chicken breast halves
1/4 teaspoon seasoned salt (MSG-free)
2 teaspoons olive oil
2 teaspoons honey mustard
1/2 cup mushrooms, sliced
2 slices bacon, cooked (to substantially reduce fat, use turkey bacon)
1 1/2 cups low fat Colby/Jack cheese blend, shredded
Preheat oven to 350 degrees.
Rub chicken breasts with seasoned salt.
In a skillet, heat the olive oil over medium high heat. Brown the chicken on both sides. Cook until chicken is done, but still quite tender.
Remove chicken from skillet and spread each piece with honey mustard and place in an 8 x 8 baking dish. Cover each piece of chicken with a layer of mushrooms and then crumble one slice of bacon on top.
Cover all with shredded cheese and bake at 350 degrees or until cheese is melted.
Serve with steamed red potatoes and baby carrots. You could add a green salad also.

Chicken Breasts Alfredo
3 whole chicken breasts, split and boned
1/2 cup flour
3 eggs
2 tbsp water
1/2 cup romano cheese, grated
1/4 cup parsley, snipped
1/2 tsp salt
1 cup fine bread crumbs
3 tbsp butter
2 tbsp vegetable oil
6 slices mozzarella cheese
CHEESE SAUCE
1 cup whipping cream
1/4 cup water
1/4 cup butter
1/2 cup romano cheese, grated
1/4 cup parsley, snipped
Coat chicken with flour. Mix eggs, water, Romano cheese, parsley and
salt. Dip chicken pieces in egg mixture, then into bread crumbs.
Heat butter and oil in large skillet. Cook chicken breasts over
medium heat until browned about 15 minutes. Remove chicken to baking
dish 11 1/2x7-1/2-inches. Heat oven to 425 degrees F.
Make cheese sauce. Pour cheese sauce over chicken. Top each piece
with a slice of cheese. Bake until cheese melts and chicken is
tender, about 8 minutes.
CHEESE SAUCE:
Heat cream, water and butter in 1-quart saucepan until butter melts.
Add cheese; cook and stir over medium heat for 5 minutes. Stir in

Gosh Mommy, I'm sorry you had so may answers from people who didn't read your question right. You told us that all you had was chicken and pork chops and had no way to the store before dinner but they all somehow want you to make beef and shrimp and lobster etc....maybe you can go borrow this stuff from the neighbors or something right? Hahahaha I say go with "Little's" suggestion. It's quick, easy and very yummy. I make that alot and you could use the chkn instead of the pork if you like. Your honey's tummy will love it! Place pork chops in a lightly greased baking dish & season w/salt & pep., garlic powder or minced garlic & a little hot sauce (optional). Cover pork chops w/diced onions, diced bell peppers & mushrooms. Add some wine (white or red left-overs you have hanging around) Cover w/aluminum foil & bake for about 30 min., at 350 then remove foil to brown for about another 45 min. You can add a can of tomato sauce to make a red sauce or a can of chicken broth to make a garlic wine sauce. Make some long grain & wild rice as a side .

Season and brown pork chops on the stove
Transfer to a baking dish and place in the oven until done.
Remove from oven and spread a can of ready made chili on top, and back in the oven until heated through.
remove and sprinkle shredded cheese on top and bake in the oven until melted.
I have served with mashed potatoed, fries, rice, and salad, corn green beans what ever you have on hand. These are great on a cold evening......Happy Valentines's Day!
