Here's a great simple one for you :
4 boneless chicken breast halves
1 cup mayonnaise
1/2 cup freshly grated parmesan cheese
1 1/2 teaspoons seasoning salt
1/2 teaspoon ground black pepper
1 teaspoon garlic powder


Mix mayonnaise, cheese and seasonings.
Spread mixture over chicken breast and place in baking dish.
Bake at 375°F for 45 minutes.

Chicken dinner

4 skinned and boned chicken breasts
1 package (4 oz.) chopped beef
1 pint (small) sour cream
1 can undiluted mushroom soup
3/4 cup butter
45 crushed Ritz Crackers

Cover bottom of 8 x 12 dish with broken pieces of beef. Arrange chicken breasts on beef. Mix soup and sour cream and pour over chicken. Melt 3/4 cup oleo and mix with 45 crushed Ritz crackers. Put on top of chicken. Refrigerate. When ready, bake at 275 degrees for 4 hours uncovered. If too brown the last hour, cover with foil.

Serves: 4

Slice potatoes thinly and lay into bottom of a large pan in a single layer (omit this if you don't like potatoes). Sprinkle liberally with 1/2 chopped/diced onion and garlic powder. Lay tenderized chicken breasts on top of potatoes in single layer. Sprinkle liberally with remaining chopped onion, garlic powder, cracked black pepper and lots of fresh or dried tarragon. pour about 1/2 cup of vegetable or chicken broth into the pan, cover with foil, put into 400F over for about 50 minutes or until the potatoes are tender but still hold their shape. Very tasty, aromatic and good for diabetics. If you omit the potatoes, bake at 425F for about 20-25 minutes then serve with the sides of your choice.

1 package of dry Ranch Dressing Mix
1 cup of water
1/4 cup of oil
Mix well and place in a zip lock bag along with chicken
Refrigerate for at least 4 hours but overnight is better
Discard remaining marinade
Bake in a 350 over for about 40-45 minutes

Serve with rice or noodles

This casserole is heavenly!

POPPY SEED CHICKEN

5 cups chopped cooked chicken (I boil mine then chop it)
1 (10.5 ounce) can condensed cream of chicken soup
1 cup sour cream
1 1/2 cups crushed buttery round (ritz) crackers
1 teaspoon poppy seeds
1/2 cup butter, melted

Preheat the oven to 350 degrees F (175 degrees C).
Place the chicken into a 9x13 inch baking dish. In a medium bowl, stir together the condensed soup and sour cream. Pour over the chicken. In a separate bowl, stir together the crushed crackers, poppy seeds and melted butter. Sprinkle over the chicken and sauce.
Bake for 30 minutes in the preheated oven, until the top of the casserole is browned and the sauce is bubbly.

1 cup apple sauce,1/4 cup brown sugar, and 1/4 stick of butter.
cook until it starts to get thick.
don't over cook. it will burn fast.
cook your chicken and then poor apple glaze over top.
