Easy to make chocolate recipes?!
chocolate gnache truffles...
100g chocolate of choice (use the best quality dark, milk, white you can lay your hands on)
1 carton thick cream (uk double)
flavourings as required ie liquors, fruit essence etc
Grate chcolate into a bowl & set on top of a folded T Towel
Place cream into a small pan, add flavourings, if liquor use 1 to 2 tablespoons to taste, then heat gently till its just about to reach a simmer (scalding)
Pour hot cream mixture onto the grated chocolate & leave it alone totally, dont even be tempted to poke at it with a spoon ! for 5 mins.
Stir the cream & chocolate with a small whisk or fork until its well mixed & it starts to thicken.
Leave to cool & then chill in fridge or 1 or 2 hrs.
Scoop out teaspoons of the mixture, roll into balls & then roll in your choice of coating.
Coating can be -
Contrasting melted chocolate, crushed almonds & cocoa powder, finely chopped dried fruits mixed into melted white chocolate - you are only limited by your imagination )

You can make brownies or peanut butter cookies (you can even use premade dough) in a little muffin tin and top each one with a Hershey's kiss or peanut butter cup as soon as you take them out of the oven. Easy and yummy!
TRIPLE CHOCOLATE FUDGE
1/2 cup butter
4 1/2 cups sugar
1 can (1 1/2 cups) evaporated milk
4 1/2 cups mini marshmallows
2 cups chocolate chips (semi-sweet)
1 12 oz bar sweet baking chocolate, chopped
2 1 oz squares unsweetened chocolate, chopped
2 teaspoons vanilla extract
1/2 teaspoon butter rum schnapps or amaretto
1 cup pecans, walnuts or macadamia nuts, chopped
Line a brownie-sized baking pan with wax paper or foil, covering sides of pan. Spray with non-stick spray or grease foil with butter.
Combine butter, sugar, and evaporated milk (do not use sweetened condensed milk) in a saucepan stirring over medium heat until butter is melted and sugar is dissolved.
While constantly stirring, turn to high heat and allow to reach a rolling boil. Once mixture is boiling, stop stirring and allow to boil for an additional 5 minutes, then remove pan from heat.
Stir in marshmallows; when melted, add chocolate and continue to stir until all is melted and well combined. Stir in flavorings (vanilla and butter rum or amaretto), then add chopped nuts.
Immediately spread mixture in the lined baking pan. Sprinkle with demerarra or colored sugar (optional).
Allow to cool at least one hour before cutting into squares for serving.

Easy (But Elegant) Chocolate Candy
3-4 servings 12-15 candies 11 min 10 min prep
1 cup chocolate wafers or white chocolate wafers (approximately)
Filling Ingredients Choose any combination to equal approximately 1/4 cup
coconut (regular or toasted)
chopped pecans
chopped walnuts
chopped peanuts
chopped almonds
chopped hazelnuts
chopped cashews
chopped macadamia nuts
toffee pieces
finely crushed pretzels
Rice Krispies
chopped dried fruit
crushed mint decorative candies
crushed chocolate sandwich style cookies
Place the chocolate wafers in a microwave safe dish.
Heat for 1 minute and stir.
If needed, heat in 15 second intervals, stirring after each, until melted and smooth.
Stir in one or two of the filling ingredients listed.
The amount and combinations depends on personal taste but don’t add so much that the mixture doesn’t hold together.
Spoon mixture into mini candy papers.
Garnish with more the the Filling Ingredient (s) used or drizzle, in a contrasting chocolate, in a zig-zag pattern on top.
TIPS: do not allow moisture to come in contact with the chocolate while it is melting or it will “bind” and become an unusable mess.
Make sure your bowl and spoon are completely dry.
