It's called clarified butter. Melt the butter . . . you want the clear stuff. The cloudy stuff is the additives, salts, etc...

Yes, LuLu is exactly right. Drawn butter is clarified butter, which is what happens when butter is melted and you spoon off all the cloudy stuff that seperates.

If you have a store that sells ethnic food ask if they carry "Ghee". It is clarified butter. It is good for the lobster and left over will keep a very long time in the cupboard. It does not spoil. It's good on toast and makes veggies and other foods have a wonderfully delicate flavor. Typically, it's used in Eastern cooking like curries.

Melted butter is ok for lobster. Just skim off the foamy part before serving.
