First you need to get a Madeline pan. Pretty much any recipe site will give you a recipe but here is a secret family tip. Before putting the batter in the pan, use soften butter to grease the pan and put some unflavored bread crumbs to coat. It gives the Madelines a nice coating.

My family is French and Madelines were my grandmas specialtiy

go to starbucks, get some madelines, then come home and put them in the oven until you forget about them. One day you will open your oven and VOILA fresh madelines.

Almond Madeleines
2 large eggs
1?3 cup caster/superfine sugar
1?4 tsp salt
1?2 tsp vanilla extract
1/4 tsp almond extract
1?3 cup Plain/all-purpose flour, sifted at least twice
3 tbsp finely ground almonds
4 tbsp unsalted butter, melted & cooled

Preheat oven to 375°F. butter and flour 12 molds in a madeleine pan.

Combine eggs, sugar and salt. Whisk until pale, thick and fluffy, about 4-5 minutes. Mix in vanilla and almond extracts.

On low speed, mix in the sifted flour and almonds until just incorporated. Using a rubber spatula, gently fold in the melted butter until blended.

Fill each mold almost completely full. Bake the madeleines until the tops spring back when lightly touched, 10 to 12 minutes.

Cool in pan for 2 mins. Remove madeleines from pan, cool completely on cooling rack.
