What is the best recipe for greens that is lowfat and will remove the bitterness? Thank you.?!


Question: Sugar Pie had tips I didn't know about.....I would suggest preparing the greens...per Sugar Pie's suggestion...then in a bit of olive oil....and fresh garlic minced...saute the greens, add a pinch of sugar....salt and pepper. Can toss with a favorite vinegar just before serving....

Use a smoked piece of turkey or tasso to season with, rather than bacon or fatback. Tear out stems, even up into the leaves, as they are bitterer than the leaves themselves. And if you are doing straight collards, they are just plain strong. Consider cutting them w/ an even amount of mustards or turnip greens to mellow them out. Oh, and a pinch or two of sugar helps cut the bitterness, too.

For strong greens, I use a little bit of oil, garlic and generous amounts of lemon juice along with salt and pepper.
