Cheesecake help?!
Answers: I bought a cheesecake mix to make for my boyfriend for Valentine's tomorrow, and I saw strawberry cheesecake muffin mix on sale... do you think it would work to make the cooked muffins as the bottom and then put the no bake cheesecake on top? I wasn't sure if the muffins would get soggy... anyone know?
your muffin mix will be soggy and cold.It doesn't sound good and when you cut it . well I 'm not sure. Guess you should try it. What the heck.
I'm not sure if you mean baking the muffins at the bottom of the oven and the cheesecake at the top rack or using the muffin mix for the crust... definitely don't use the muffins for a crust :) I wouldn't do the muffins an cheesecake at the same time either, a cheesecake is pretty delicate and many cooks suggest putting a pan of water on the bottom rack to prevent it from cracking on top. It will be uneven baking too. Just do them separately and you should be fine. good luck :)
I would suggest a light layer of butter over the muffin bottom. That way, you can avoid it getting soggy. Just a thought, not 100% sure on that!

That should work well, the muffins will take up quite a bit of room so I suggest a large size (tall) spring-form pan so you won't over flow or fill the pan. Cover tightly and lat it chill in you refrigerator til set completely.
CHEESECAKE MUFFINS
3 (8 oz.) pkgs. cream cheese
1 c. sugar
5 lg. eggs
1/2 tsp. vanilla
TOPPING MIX:
1/4 c. sugar
1/2 tsp. vanilla
1/2 pt. sour cream
Preheat oven to 350 degrees.
Mix all ingredients for cheesecake mix with electric mixer until smooth. Pour into cupcake pan (small sized cupcakes and use paper liners) 3/4 full. Bake for approximately 35 minutes at 350 degrees. Do Not Brown!!!
Remove immediately and put 1 teaspoon of topping on each mini-muffin (and you can put pineapple or cherry, etc. on top now). Return to oven and bake an additional 5 minutes.
Make cheesecake muffins a day ahead of your party and serve well chilled. Recipe makes about 48 small cakes.
