SEARED FILET MIGNON W/ SILKY MUSHROOM CREAM
Get 2 beautiful 1 1/2 inch thick pieces of filet from your
butcher, tie the circumfrence of the steak to hold its shape. make your sauce:
2 tbsp butter
1 shallot, chopped
1 clove garlic
3 button mushrooms
1 oz red wine
2 oz beef stock
3 oz cream
salt and pepper
for sauce: chop shallot roughly, add to med. heat pan w/ butter and saute lightly while you chop mushrooms-- roughly as well. Add mushrooms to pan. cook this mixture until mushrooms are golden. add red wine and allow to reduce almost completely, add beef stock and allow to reduce by half, add cream, salt and pepper and pass through fine strainer; set aside. For steaks: place a cast iron pan over high heat w/ 2 tbsp of oil and heat until oil is smoking. season steaks heavily with salt and pepper and place in pan carefully. cook 1 min/ side, roll edges on hot pan until brown all over, steak will be blue rare; if you like it more done then start heat at med. and cook 3-4 mins/ side for med rare. allow to rest 4-5 mins. serve steak w/ mushroom cream on top along with grilled asperagus and crisp roasted potates.

Can you not be a little more specific? Do you like spicy, are you a veggy, does it have to be quick and easy?
Suggestions - bacon sandwich, chilli, quiche with any filling you like, naan bread with spicy chicken and salad fillings, fish fingers and baked beans!!!!

Burritos
1 can refried beans
1 package of Torillas/wraps
1 good-size bag of shredded Tex-Mex cheese (cheddar and monterrey jack)
Small container of salsa (optional)

Spread a thin layer of the refried beans all over one side of the wrap, then sprinkle on the cheese. Add a teaspoon of salsa to the middle. Wrap it up, folding the ends in as you go.

Bake at 350 degrees for 15 minutes or until a little bit of browning appears.

Garnish plate with a big dollop of sour cream for dipping!
