Can i freeze raw sushi tuna?!
does anyone know if it will keep in the freezer for a while or if it will get gross and freezer burnt and basically not even worth trying?
Answers: i bought raw sushi quality tuna from my local market. i was planning on making sushi tonight but i didnt end up doing so. it cost like 20 dollars so i dont want to just throw it out, and im going to be out of town for 5 days so i cant use it this weekend.

You "can" refreeze it but once it has been thawed you will ruin the texture of sashimi grade fish.
Re-freezing damages the flesh cells because when you slowly re-freeze (not flash frozen as is done when first caught) your tuna, the water in the fish "crystallizes" and are like tiny knives that poke holes in cell membranes making your tuna mushy and not sashimi grade tuna any longer.
What you can do is pan sear it, with seasoning of course, wrap with suran wrap and keep it in the fridge and eat it cold once you return after 5 days.
I dont think that is a good idea because if you put it in a freezer your gonna have to warm it by cooking it and isn't it supposed to be cooked?
I will tell you to wrap it and vacuum seal it to avoid freezer burn, otherwise just use it as soon as you get back
Sometimes, "fresh" tuna has been previously frozen and thawed at the market ... and it's really not good to re-freeze food that has been frozen & thawed. Not as far as food safety is concerned, just quality.
If you do decide to freeze it, just thaw it in the fridge. And make sure you wrap it tightly and vacuum seal it if you can. Eat it as soon as you can when you get home.
Make a Poke out of it (soy sauce, scallions, sesame oil, & sesame seeds) ... good stuff!
