Help my broccoli soup is lumpy?!
Answers: I put it in my crock pot 5 hours ago and had to leave....when I returned it's lumpy? but it looks like just the cream is lumpy( ....the expiration date on my cream was good.) I didn't add the flour mixture yet? If I add the flour mixture and blend it...do you think it would still be good? Thanks!!!
It definitely sounds like you have curdled the cream..
Two things you can choose from:
1. Add the flour and proceed - the fat needs the flour to create an emulsion and to make a thick soup, just like in a white sauce.
2.Try and blend it right now and see what comes of it. Try it, if it's still good - then proceed in adding the flour mixture...
If neither of these work, throw the batch away and start afresh.
By the way - this broccoli soup sounds complicated. When I make mine, I just chop up some broccoli, onion, garlic then add them to a pan. Fill the pan with some stock/boiling water (upto about 1/2 - 3/4 depth of the broccoli) and simmer with the lid on for 10-15 minutes. Then blitz, then add seasonings as you please.
Lumpy is a funny word! But I am not going to help you (sorry) because I really hate broccoli.
The cream should not be added until the end of the cooking process and will need to be tempered before adding. What you have is basically curdled milk. You can try running it through a blender, but it still won't be right. Be careful with hot soup in a blender. It will blow the lid off.
Turn the heat down and stir it up with a whisk.It will be ok.Should be anyway... if it didn't get to the point where it broke....and then add your flour mixture.
do not it it. a cream based soup is not supposed to cook for 5 hours. to make your soup , you must be there from start to finish.
5 hours is WAY too long for a cream soup. Try staining it and thickening with the roux. The cream is probably separated and it may be too late.

I would toss this disaster and start over , you can make soup very quickly
Do you have milk or cheese in it? Either could have curdled from too high of heat. You probably could pull out the broccoli pieces, then puree the soup, and add the broccoli back in.
