CHOCOLATE MACAROONS

2 cups white sugar
1/2 cups butter
1 cup coconut
1/2 cup milk
3 cups oatmeal
6 tsp cocoa

Melt butter and cocoa first (that way its smooth). Add milk and sugar.
Bring to boil over medium heat for 2 minutes. Add coconut and oatmeal.

Drop by tablespoonfuls onto wax paper and leave to cool.

Chocolate Macaroons

Ingredients

to taste cooking spray
1 (7 ounce) bag sweetened flaked coconut
3 tablespoons sugar
2 large egg whites , at room temperature
2 (1 ounce) semi-sweet chocolate baking squares , melted
1 teaspoon vanilla extract
1 pinch salt

Directions

1. Preheat oven to 350 degrees. Line baking sheet with parchment paper or foil; lightly coat with cooking spray (if using nonstick pans or liners, do not use cooking spray).

2. In large bowl, toss coconut with sugar until evenly coated. In a pan melt the chocolate; let cool slightly. In small bowl, combine egg whites, chocolate, vanilla and salt until blended. Add to coconut mixture; blend well with spatula.

3. On prepared baking sheet, form heaping table-spoonfuls of mixture into 15 mounds, 2 inches apart. Bake 15 minutes or until bottoms are golden and tops start to brown (centers will be slightly soft). Let cool 10 minutes on baking sheet; remove with spatula to wire rack; let cool completely on rack. Best served the same day, but can be stored overnight in airtight container.

Easy Chocolate Covered Coconut Macaroons

Soft and chewy coconut cookies half-dipped in melted semi-sweet chocolate!

INGREDIENTS
10 cups flaked coconut
2 cups all-purpose flour
1/2 teaspoon salt
2 2/3 cups sweetened condensed milk
4 teaspoons vanilla extract
1 1/2 cups semisweet chocolate chips
1 tablespoon milk


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, stir together the coconut, flour and salt. Stir in the sweetened condensed milk and vanilla until everything is well blended. Drop by heaping spoonfuls onto the prepared pan.
Bake for 12 to 15 minutes in the preheated oven, until coconut is sufficiently toasted. Immediately remove from cookie sheets to cool on wire racks.
In the microwave or in a metal bowl over a pan of simmering water, melt chocolate chips and milk, stirring frequently until smooth. Remove from heat and set aside to cool. Dip cooled cookies halfway into the chocolate and scrape off excess onto the side of the bowl. Place onto waxed paper until set

* 1/2 teaspoon vanilla
* 1 1/2 cups coconut flakes
* 1 1/2 sqares baking chocolate, unsweetened, melted

PREPARATION:
Combine sugar and salt. Fold gradually into the beaten egg whites. Add vanilla. Fold in coconut and chocolate. Drop from teaspoon on greased baking sheet. Bake at 275° for 20 minutes.
Makes 2 dozen 1 1/2-inch macaroons.
