I need some simple side dishes to go with ribeye and scallops?!
Answers: How about some aspargus (grilled with lemon jiuce and garlic) or some sugar snap peas (snow peas) . These can be bought frozen and steamed.
The first thing that popped into my mind was asparagus (butter & lemon). How about a rice pilaf to go with it.
Grilled zucchini, since you have the steaks going.
you might want to try Greek salad or some kind of pasta salad with a balsamic vinaigrette dressing.
Asparagus Au Gratin.
2 tbsp butter
1/4 cups fresh bread crumbs
1/4 tsp sage, crushed
2 tbsp sliced green onion
1 can (10 1/2 oz) Asparagus, drained
1/4 cup of shredded Swiss Cheese
In 8x8 inch ovenproof dish, melt butter. Stir in crumbs and sage, mix well. Bake at 400 degress for 6 minutes. Remove from oven. Stir in onion, remove from dish. Arrange asparagus in buttered 1-quart baking dish. Sprinkle cheese over asparagus. Top with crumb mixture. Bake for 400 degrees for 10 minutes or until cheese melts.

Asparagus is in season now. This would be good too. Or steamed broccoli. Or fresh green beans in garlic.
I think a creamy pasta dish would be good and add the grilled asparagus seasoned simply with olive oil salt and pepper.

Since you have seafood a lemony favor works well...just simple steamed veggies with splash for fresh lemon...or you can sautee veggies in garlic and splash it with lemon goes very well.....

Roasted Asparagus with Parmesan
Serves 4
2 bunches asparagus (1? lbs.), washed and ends snapped off
1? Tbsp. olive oil
Kosher salt
Freshly ground black pepper
? cup finely grated Parmesan cheese
Preheat oven to 450oF. On a rimmed baking sheet, toss asparagus with olive oil. Season with S&P to taste. Arrange in an even layer on pan, and sprinkle w/ parmesan cheese. Roast until asparagus is tender and cheese is melted, 10-15 minutes. Serve immediately.

Pan Fried Asparagus
(for all you garlic and asparagus lovers!)
1/4 cup butter
2 tbsp olive oil
1 tsp coarse salt
1/4 tsp ground black pepper
3 cloves garlic, minced (I added more)
1/2 pound fresh asparagus spears, trimmed
Melt butter in skillet over med-hi heat. Stir in olive oil, salt and pepper. Cook garlic in butter for a minute but do not brown. Add asparagus and cook for 10 minutes, turning asparagus to ensure even cooking.
