Does anybody know some really good turkish beef/lamb/chicken recipies ?!


Question: i want to try to replicate and cook something that i'd enjoy at a premier league turkish restraunt (where the veg,meat,ingrediants are all freshly prepared), no 3 star hotel crap here thanks.

I saw a programme on tv once, and on that tv show there was a region in turkey which served a piping hot lamb dish for breakfast, it was in a broth but served STRAIGHT off the stove, so it was insanely hot. the dish looked gorgeous, and i want to know if anybody can tell me what it could have been so i can try to cook it myself.

also, in turkey, what are the best ways to eat chicken ? fry it ? bake it ? boil it ?

i ate a chicken bbq kebab once, like chicken chunks wrapped in some bread with loads of stuff inside it - and it was amazing.
if youre turkish and you know the lamb dish i mentioend, get back to me please - any recommendations for turkish recipie sites are welcomed.

Kofte in Pita Pockets


Ingredients
1 slice bread
1/2 lb ground lamb
1 garlic clove , crushed
1 small onion , finely chopped
1 teaspoon ground cumin
1 tablespoon fresh mint , chopped
to taste salt and pepper
1 tablespoon pine nuts
1/4 cup flour (for coating)
1/2 cup oil
4 pita breads
1 onion , cut into thin rings
2 tomatoes , sliced (or cut into wedges)

Directions

1. Preheat the oven to 425 degrees F.

2. Soak the bread in water for 5 minutes, then squeeze dry and add to the next 7 ingredients. Mix until thoroughly blended and malleable. Shape into small balls the size of a walnut, using dampened hands so that the mixture does not stick. Lightly coat in flour.

3. Shallow-fry for about 6 minutes, turning frequently, until golden brown.

4. Warm the pita bread in the oven for a few minutes until puffed up, then cut a thin strip off one side of each pita to make a pocket.

5. Fill pita with onion rings, tomato wedges, and a few Kofte.

Chicken Shawarma

? 1 cup fresh lemon juice
? 10 cloves garlic, mashed
? 2 TB white vinegar
? 4 bay leaves
? 2 3-inch cinnamon sticks, broken
? 2 tsp. salt
? ? tsp. ground cloves
? 2 tsp. ground cardamom
? ? tsp ground cinnamon
? ? tsp white pepper
? 1/4 tsp grated nutmeg
? 4 pebble-size pieces of mastic, crushed
? 4 lbs. boneless, skinless chicken thighs cut into 2”× ?” pieces
? 1 Tbsp. Garlic Paste (recipe below)
? Pita bread

Make a marinade by combining ? cup of the lemon juice with the garlic, olive oil, vinegar, bay leaves, cinnamon sticks, salt, cloves, cardamom, cinnamon, pepper, nutmeg and mastic in a shallow baking dish. Place the chicken in the marinade and toss the pieces to coat. cover and refrigerate for at least 2 hours or overnight. Remove from the fridge and bring to room temperature.
Heat a thick bottomed pan (I use stainless steel) and bring to high temperature. Drop pieces of chicken being sure to prevent crowding, as you want to sear, not steam, the meat. Cook in 4-5 batches, depending on the size of the pan.
Prepare the sauce; mixing the remaining ? cup of lemon juice and the Garlic Paste together, set aside.
Place the chicken on your bread of choice, drizzle with the garlic sauce, the sumac onions, tomatoes and even some tangy yogurt.

Garlic Paste
? 10 cloves of garlic, peeled
? 1/2 tsp. salt, to taste
? 1 Tbsp. tangy yogurt or yogurt cheese
? 1/3 cup extra-virgin olive oil
? 1 Tbsp. fresh lemon juice, to taste

Combine the garlic and salt in mini food processor until garlic is minced. Add the yogurt and olive oil and incorporate well. Mix with the lemon juice. Taste and add more salt and lemon juice as desired.

Turkish Style Pizza

Ingredients
5 tortillas or flat bread , separated or
5 pieces pita bread , separated
500 g lean ground beef
2 medium onions
1 cup parsley
1 tablespoon red pepper paste
2 large tomatoes , seeds discarded
1 teaspoon bell peppers
1 garlic clove
1 teaspoon salt
Directions
1Use a mixer to chop and mix all the ingredients except the ground beef. Then knead it with the ground beef. Refrigerate for an hour, then leave it outside for 20 minutes.
2Set the oven to grill (broil). Have two oven trays ready. Take some mixture with the spatula and apply on the flat bread evenly as a thin layer. Place two per oven tray and put the trays on the second rack from the top in the oven. Bake for about 3-4 minutes, making sure not to burn the edges of the
