Low Carb Low Cal recipes?!


Question: hey yall im on a low carb low cal diet...ive been on metformin for 4 days and have only had 20 grams of carbs a day. except today:( i slipped up but i want to know is what are some of your fav. low carb low cal recipes..im kinda stumped for breakfast and such please help!

It seems like they split these two categories when searching for recipes but I know Joanna Lund's recipes seem to address both factors for the diabetic and since metformin is for diabetes I suggest you look to those websites for foods that best fit your diet. Joanna's web site is called Healthy exchanges and she has cookbooks and a monthly newsletter that I took for years, and free recipes you can look up online. I also like cinnamonhearts.com but they don't update as much.

Both of these websites were influential to me when I first was diagnosed diabetic and got me in the habit of know what to look for. Also taste of home has a couple of diabetic cookbooks with great recipes.

Good luck in learning a healthier way to eat.

low carb diets dont work...going low carb or low fat is a myth...its the overall calories u consume! so count the calories! carb, sugar, and fat junkies are full of crap...u need to watch overall calories(eat atleast 1400-1500) different fruits and vegies are low or high carb...but they are the good carbs! carbs give u energy and keep ur body from eating away ur muscle. healthy carbs THAT U NEED are fruits, vegies, and whole wheat breads/pastas/oatmeal/brown rice.

people who lose on low carb are only losing cuz they are restricting calories(u should also never feel hungry either when trying to lose weight)

the only carbs u need to cut are the bad carbs found in white items and dessert items or items high in added sugar

Here is the thing;
You can eat any of those wonderful "free foods", like fish (no batter and never pilchards), salads with tomato, cucumber, onions, carrots, signage, raw green beans and so on.
I am sure you know them all......
Breakfast : Microwave a whole baby hake or even two for about four minutes on high or at least until you can actually see that the fish is done.
I like to place a few slices of tomato on top for flavor....
Have that with a "cracker wheat hi toast" biscuit.

The Lady's Perfect Scrambled Eggs
15 min | 5 min prep

Ingredients
8 eggs
3 tablespoons sour cream
1 tablespoon water
to taste salt & freshly ground black pepper
2 tablespoons butter
1/2-3/4 cup cheddar cheese

Directions
1In a medium sized bowl, beat eggs, sour cream, water, and salt and pepper until fluffy.
2Using a nonstick frying pan, melt butter and cook eggs over low heat, stirring occasionally, until just set.
3Stir in the cheese just before serving.

Bacon Wrapped Jalapeno Poppers
20 min | 10 min prep

Ingredients
25 fresh jalapeno peppers
14-16 ounces cream cheese
2 cups cheddar cheese
2 (16 ounce) packages bacon

Directions
1Cut stems off of peppers and cut them all in half longways.
2Remove seeds from peppers.
3Fill each pepper with cream cheese and sprinkle cheddar cheese on top.
4Wrap 1/2 slice of bacon around each pepper half.
5Place on baking sheets and place in 450 degree oven for 10 to 15 minutes or until bacon is fully cooked.
6Remove and serve when cooled.
7Enjoy!

Chicken Lazone
25 min | 5 min prep | SERVES 4

Ingredients
1 teaspoon salt
1 1/2 teaspoons chili powder
1 1/2 teaspoons onion powder
2 teaspoons garlic powder
4 whole boneless skinless chicken breasts
1/4 cup butter , divided
1/2 cup heavy cream
Directions
1Combine the seasonings and coat chicken breasts.
2In large saute pan melt half of the butter and cook chicken over medium heat for about 7 to 8 minutes, turning once.
3Pour the cream into the skillet and lower the heat.
4Simmer for several minutes, stirring until the sauce thickens then add the remaining butter.
5When butter is melted place chicken breasts on four plates and top with the sauce.
