How to make stuffed avocados?!

Ingredients

2 large avocados (ripe and cut in half)
1/2 lb raw shrimp , peeled
1/2 lb bay scallops
1 cup mayonnaise
1 tablespoon Dijon mustard
1 egg
1 small bell pepper , chopped fine
1/2 teaspoon salt
1/4 teaspoon pepper

Directions

1. Preheat oven to 350 degrees.
2. Cook shrimp in boing water until barely done (about 2 minutes). Simmer scallops in the same fashion. Cut shrimp into bite size pieces.
3. Combine mayo, mustard, egg, bell pepper, salt and pepper. Fold seafood in gently.
4. Hollow out avocados enough to hold seafood, leaving only about 1/2 inch of avocado all the way around. Mound filling as high as you can, and spread sauce to cover edges of avocado. Place on baking sheet and bake about 25 minutes until puffed and brown. Serve immediately.

Stuffed Avocado with Cilantro Mayonaise

2 to 3 ripe avocados halved, pitted, and the pulp removed
tomatoes diced
small onion diced
ripe olives chopped

1/2 cup mayonnaise
1/2 cup sour cream
2 tablespoons fresh parsley (Italian or regular) chopped
Zest of 1 small orange
Juice of 1/2 orange
Salt and freshly ground black pepper to taste

Dice the Avocado pulp. Combine the pulp with the tomatoes, onion, and olives and mix well. Fill the avocado shells with the avocado mixture. Prepare the cilantro mayonaise, combining all ingredients and mixing well. Dollop the cilantro mayonaise on top of each stuffed avocado half.

Ingredients:
3 large, ripe avocados
3 hardboiled eggs, chopped
1 cup minced ham or other meat, such as portk, chicken or fish
1 cup mayonnaise, or to taste
salt and pepper to taste
shredded dark leaf lettuce

Preparation:

Combine the ham, chopped hard-boiled eggs with enough mayonnaise to bind them. Chill until ready to use.

Just before serving, cut the avocados in half, remove the pit and peel. Place a half over shredded lettuce on six plates, sprinkle with lime or lemon juice to prevent discolation, and then add the filling to the avocado cup.

You can substitute cooked vegetables for the chopped eggs, or a vinaigrette for the mayonnaise.

Seafood salad is excellent with avocado.

Thanks for the question. I love avocados, but never heard of them stuffed before. Thanks to all the answers...I'll be copying them too!!

Ugh, you people eat too much mayonnaise. Disgusting. Yes, you can mix up a bunch of stuff with mayonnaise and stuff it in there, or you can make something that won't make you have a heart attack.

Grilled chicken thighs (boneless, skinless)- chop them up. If you don't have a grill (I use an indoor grill) you can broil them. They will be fairly thin so it won't take too long. Season the chicken with lime juice, cumin and garlic. Anyhow, once they've cooled, chop them loosely and put into a bowl with chopped spring onion, chopped fresh cilantro, tomatillo salsa (that would be the green sort if you're unfamiliar with it) and a few shreds of monterey jack cheese. Toss until it comes together, then stuff into the avocado shells. Sprinkle a little lime juice and a little freshly ground pepper over the top.

HOT STUFFED AVOCADO
8 servings

4 lg Avocados (peel and halve)
1/4 c Lemon juice
1/16 t Garlic powder
1/4 c Butter or Margarine
2 T Green onion (chopped)
1/2 t Celery salt
1/16 t Cayenne pepper
1/4 c Flour
2 c Light cream
2 c Chicken (cooked & minced)
1 c Sharp Cheddar (grated)

Roll outside of peeled avocados in lemon juice to keep color. Put in large
baking pan. Sprinkle with lemon juice and garlic powder. Melt butter; add
green onions, celery salt and pepper. Cook 5 minutes. blend in flour. Add
cream. Cook while stirring until thickened. Fold in chicken and 1/2 cup
cheese. Bake avocados at 350 degrees for 15 minutes. remove to serving
plates. Ladle filling over avocados. top with remaining cheese.
