Does anyone have any recipes using salsa?!
Answers: We made salsa with our garden produce last summer. I am looking for some recipes that salsa is an ingredient in. Thanks!
Low-Fat Baked Chicken Chimichangas

Spiced chicken and refried beans in a crisp shell.
Serves: 6-8
Prep. Time: 0:45
1 sm. onion - chopped
3 cloves garlic - minced
1 Tbls. vegetable oil OR butter OR margarine
2 cups salsa
1 1/2 tsp. chili powder
1/2 tsp. ground cumin
1/2 tsp. ground cinnamon
1 pinch salt
2 1/2 cups cooked, shredded chicken OR turkey
(8) 12" flour tortilla
1 cup canned refried beans
non-stick cooking spray - as needed
-In a large saucepan over medium-high heat, sauté onion and garlic in oil/butter until tender; stir in salsa, chili powder, cumin, cinnamon, and salt; fold in chicken/turkey; remove from heat and set aside.
-Working with one tortilla at a time, spoon 2 Tablespoons of beans down the center of each tortilla; top with a scant 1/2 cup of the chicken mixture.
-Fold the top and bottom of the tortillas toward the center, then roll up the sides.
-Secure with wooden toothpicks or pieces of spaghetti noodles if necessary.
-Place chimichangas in a 13" X 9" X 2" baking pan, seam side down.
-Spray all sides of the chimichangas with a light coating of cooking spray.
-Bake in a 450 degree oven for 20-25 minutes, or until golden brown and crisp, turning after 10 minutes.

Southwestern Breakfast Frittata

Serves: 8
1/2 bag frozen hash browns OR
1/2 bag frozen chopped potatoes
1 Tbls. vegetable oil
1 Tbls. minced onion
1 Tbls. chives
1/2 tsp. paprika OR cayenne pepper
1/4 tsp. black pepper
1/4 tsp. salt
1/4 tsp. garlic powder
1 lb. breakfast sausage - browned OR
1 lb. bacon - cooked, crumbled
5-6 eggs - beaten
1 cup grated jack/cheddar cheese
salsa - as needed
-In a large skillet, brown potatoes in oil, not stirring, until golden brown on one side. Gently flip potatoes so uncooked side is on the bottom.
-Sprinkle onion, chives, pepper, salt, garlic powder, and paprika/cayenne over potatoes.
-Sprinkle cooked and crumbled sausage or bacon into pan.
-Reduce heat to lowest setting.
-Pour beaten eggs over top and cover with lid.
-After a couple of minutes, cut slits into the frittata to allow the eggs to seep down and cook.
-When the eggs look cooked, turn heat off, then sprinkle the cheese on top and replace lid so the cheese melts.
-Once cheese is melted, cut the frittata into slices like a pizza and serve with salsa on the side.

when mixed with sour cream or cream cheese is makes a great spread for sandwiches. Also, you could melt some cheese in it for a new twist on the dip.
I make easy guacamole with it, just mash avocadoes with salsa. No choppings required.

We have a great bean dip recipe. It's 1/2 cup salsa, 1/2 cup velveeta cheese, and 1 can of Campbells bean with bacon soup. You can microwave all until melted, then stir and seve with chips. Easy and no mess! I also use sals in my meatloaf. Or add it to any reciep that call for tomato sauce, it adds a little zip.
Using salsa is a great way to spice up scrambled eggs! I quite often will mix it in after eggs are done being cooked and top with shredded cheese.
fry rice(1 cup makes 3) when brown add salsa and you have Spanish rice
I love making breakfast burritos with salsa, scrambled eggs, and cheese rolled up in a flour tortilla. Yum!
This is my favorite. Put a little EV olive oil and some garlic in a skillet and saute. Add ground chicken or ground turkey. Season with cumin and lime juice. When mostly browned, add black beans and white corn. (I often use canned.) Add salsa in until everything sort of adheres together. Sprinkle chopped cilantro over it, and stuff it into a toasted whole-wheat pita pocket.
I like to stuff some torn spinach leaves into the pocket also. They will stand up to the heat from the filling better than lettuce.
I love cottage cheese, and salsa dip.
Salsa Chicken
Dredge cleaned breast in seasoned flour, and saute until golden. Place in oven-proof pan, top with salsa and cheddar cheese and bake for 15-20 minutes, or until done (350F). Great served with rice.
I got a yummy recipe off the back of a Pace salsa jar a few years back.
Ingredients
1 1/2 cups Pace Picante Sauce (mild, medium or hot)
3 tablespoons light brown sugar , packed
1 tablespoon dijon-style mustard
4 boneless skinless chicken breasts
3 cups cooked rice , hot
Directions
1. Mix sauce, sugar and mustard.
2. Place chicken in 2 quart shallow baking dish.
3. Pour picante sauce mixture over chicken.
4. Bake at 400°F for 20 minutes or until chicken is done. Serve with rice.
I often make pizza using salsa instead of pizza sauce. It gives it a real spicy taste. I also top the pizza with cheddar or Mont. Jack cheese.
