Taco Soup.....just cut the recipe in half
2 pounds ground beef
2 cups diced onions
2 (15 1/2-ounce) cans pinto beans
1 (15 1/2-ounce) can pink kidney beans
1 (15 1/4-ounce) can whole kernel corn, drained
1 (14 1/2-ounce) can Mexican-style stewed tomatoes
1 (14 1/2-ounce) can diced tomatoes
1 (14 1/2-ounce) can tomatoes with chiles
2 (4 1/2-ounce) cans diced green chiles
1 (4.6-ounce) can black olives, drained and sliced, optional
1/2 cup green olives, sliced, optional
1 (1 1/4-ounce) package taco seasoning mix
1 (1-ounce) package ranch salad dressing mix
Corn chips, for serving
Sour cream, for garnish
Grated cheese, for garnish
Chopped green onions, for garnish
Pickled jalapenos, for garnish
Brown the ground beef and onions in a large skillet; drain the excess fat, then transfer the browned beef and onions to a large slow cooker or a stockpot. Add the beans, corn, tomatoes, green chiles, black olives, green olives, taco seasoning, and ranch dressing mix, and cook in a slow cooker on low for 6 to 8 hours or simmer over low heat for about 1 hour in a pot on the stove. To serve, place a few corn chips in each bowl and ladle soup over them. Top with sour cream, cheese, green onions and jalapenos.

CHEESEBURGER PIE
Makes: 6 servings
1 pound lean ground beef
1 medium chopped onion
1/2 teaspoon salt
1 cup (4 oz) shredded light cheddar cheese
1/2 cup reduced-fat baking mix
1 cup 1 percent milk
2 eggs, slightly beaten
Heat oven to 400oF. Coat a 9-inch pie plate with cooking spray. Heat a large nonstick skillet on medium. Cook beef and onion 6 minutes or until meat is no longer pink and onion is softened; drain. Stir in salt. Spread mixture in pie plate; sprinkle with cheese. In a medium bowl, with a fork, stir baking mix, milk and eggs together until blended. Pour into pie plate. Bake about 25 minutes or until knife inserted in center comes out clean. Cut into wedges and serve.
Per serving: 270 calories, 25g protein, 14g fat, 5.6g sat fat, 12g carbs, 126 mg cholesterol, 524 mg sodium, 1 g fiber.

Skillet Lasagna (aka Hamburger Helper)
1 lb. lean ground beef
? cu p chopped onion
? cup chopped carrots
1? cups mafalda (mini-lasagna noodles or other pasta)
1? cups water
? tsp. Italian seasoning blend
2 cups marinara or other tomato-based pasta sauce
8 oz. fresh sliced mushrooms
1/3 cup or more shredded mozzarella cheese
Cook lean ground beef, chopped onion and chopped carrots in a Dutch oven on medium-high about 6 minutes or until beef is no longer pink. Drain. Stir in raw pasta, water, Italian seasoning, pasta sauce mushrooms. Heat to boiling, stirring occasionally. Reduce heat to low; simmer, uncovered, 10 minutes or until pasta is tender. Sprinkle with mozzarella cheese and serve.
This recipe is easy to increase or decrease in size. It also tastes great the next day!
Ground Beef Vegetable Soup with Rice
4 to 6 main dish servings
1 pound lean ground beef
1 medium onion, chopped (equals about 1 cup chopped onion)
1 (28-ounce) or 2 (14.5-ounce cans) diced tomatoes, including juice
2 cups water
1 cup cooked brown rice
2 cups frozen, mixed vegetables
Salt and pepper to taste
In large skillet, brown ground beef and onion over medium heat 8 to 10 minutes or until beef is no longer pink, breaking up into 3/4-inch crumbles. Pour off drippings.
Transfer browned meat and onion to a large pot. Add tomatoes and water. Bring to a boil.
Add rice and vegetables. After mixture returns to a boil, reduce the heat, cover and simmer until vegetables are tender.
Add salt and pepper to taste.Thin with additional water if it seems too thick and reheat until it starts to bubble.
quick chili. get a pack of chili seasoning, a can of black beans (no gas), and a can of tomato sauce

MEATLOAF: mix meat with 1/2 cup bread crumbs, 1 tsp salt, 1/2 tsp. pepper, 2 med. eggs, a splash of milk, catsup, mustard, worchestershire sauce, mix well. Place in a caserole dish, do not pack too tight, but shape into a loaf. Bake @350, about an hour. Cool somewhat and slice. Serve with scalloped potatoes and green beans.
Brown the meat and drain. Add a can of corn (drained), a can of stewed tomatoes (flavor of your choice, but I like the ones the ones that are spicy with chopped chilis in them), and a pound of cooked elbow macaroni. Let it sit on the stove til its warm and its ready to eat. Kind of a homemade, simplified goulash. I love it.
well a simple meal is spaghetti bolognaise.
im not sure of the recipe, but all you need is spaghetti (obviously! =] )
and then the ground meat, some tomatoes, basil, oregano, onions, anything u like really, u can add in mushrooms or anything !
its quick and easy, can be frozen, a little serves many and goes a long way
you can serve it with fresh salad or crusty rustic bread
its sooo easy to make you just need 2 chop the tomatoes up so there as big as u want them, fry the onions so they go pale and soft and then anything else you want, cook the meat in a man then add the tomatoes etc, to make it extra nice add some ketchup! or tomato paste, or u can get canned tomatoes (but not too much u dont want it turning into a soup)
then just mix the spagetti in to the pan with everything in it

Crockpot Beef Burger Stroganoff
1 lb lean ground beef
3 slices bacon, diced (optional)
1 small onion, chopped
2 tbs flour
? tsp paprika
1 tsp salt
1 can (10 3/4oz) condensed cream of mushroom soup
1 cup dairy sour cream
6 to 8 hamburger buns (toasted)
In large skillet, brown beef and bacon until red color disappears. Drain. In crockpot, mix together drained beef, bacon, onion, flour, paprika, and salt. Stir in soup. Cover pot and cook on high 2-3 hours. Stir in sour cream. Spoon mixture over toasted buns. Serves 6 to 8.
