I need a sweet marinade that would be really good on salmon.?!
Answers: I want it to be sweet...not too gingery...any ideas?
As a former chef be careful, as your cooking the sugars in the marinade with burn, if anything get the piece cooked about 50% and then brush on a sweet sticky sauce, as it will not burn as quickly.
Plus marinating salmon or any fish is only good for flesh that has small pores, if left in to long it will seep into the flesh and make it mushy when cooking. make a sauce like some of the posted recipes, even cook it and thicken it with cornstarch and as the fish has been cooked and turned, start it on the flesh side and while it is cooking on the skin side whether it is on or off start brushing it on, and be careful again to much and the glaze burns and the fish is still raw inside, if your not sure, pop it into the microwave for 2-3 minutes to make sure, we did this in the hotel business.
Pineapple Juice.
Add a little honey or fruit juice to a bottled teriyaki glaze, then broil or bake it.
It's delicious.
Here's one:
1/3 cup orange juice
1/3 cup light soy sauce
3 tablespoons canola oil
3 tablespoons ketchup
1 1/2 teaspoons honey
1/2 teaspoon ground ginger
2 garlic cloves , minced
1 tablespoon orange zest
Slash salmon, allow to marinade in fridge for an hour or so and grill.
Lawry's makes a teriaki marinade in a bottle that's really good on salmon. I guess any teriaki marinade would work.

INGREDIENTS
1/4 cup maple syrup
2 tablespoons soy sauce
1 clove garlic, minced
1/4 teaspoon garlic salt
1/8 teaspoon ground black pepper
1 pound salmon
DIRECTIONS
In a small bowl, mix the maple syrup, soy sauce, garlic, garlic salt, and pepper.
Place salmon in a shallow glass baking dish, and coat with the maple syrup mixture. Cover the dish, and marinate salmon in the refrigerator 30 minutes, turning once.
Preheat oven to 400 degrees F (200 degrees C).
Place the baking dish in the preheated oven, and bake salmon uncovered 20 minutes, or until easily flaked with a fork
