Do you have a salmon cake recipe that doesn't use crackers?!
Answers: I would love it if you would share............thanks?
I assume you mean salmon fishcakes? I make mine with the following made-up recipe.
Ingredients:
Makes 6-8 large fishcakes
600g white potatoes (I use Yukon)
16 oz canned salmon
1 tsp smoked hot paprika
50g spring onions/scallions, sliced thinly
100g milk
Dried garlic flakes
Salt and pepper to taste
Method:
1. Cut the potatoes (with skin on) into chunks. Place into a microwaveable bowl, cover and microwave for 10 minutes.
2. Mash the potatoes (with the skin - more fibre and nutrition) until fluffy. Season with salt, pepper, garlic and paprika and stir in the milk (make sure it's not too wet - otherwise the mixture will be very very hard to handle).
3. Stir in the chopped scallions.
4. In a dish, flake the salmon and add to the mashed potato, stir through being careful not to break up the salmon chunks.
5. Check the seasoning and alter as you wish.
6. Form balls of the mix and either fry in a pan OR bake/grill.
If you need to convert the weights of my ingredients, please see this link:

I use it a lot, and it is highly accurate. Enjoy!
You can use either bread crumbs or Panko (larger breadcrumbs) in place of the crackers and it will still turn out great.
Nigella has a good salmon pattie...day old mashed potatoes are used, panko on the outside.
SALMON CAKES
1 (15 1/2 oz.) can pink salmon (bones, skin, dark flesh & water removed)
4 lg. potatoes, peeled & cut

Flake salmon in a large bowl and set aside. Boil potatoes until soft. Drain and mash adding onion powder, garlic powder and salt if desired. Add onion, whole egg and enough bread crumbs to absorb egg. Add the salmon to this and mix very well to evenly distribute the salmon. Form into patties 1/4" thick and 1" round.
