Home-made vanilla pudding w/out cornstarch ??!


Question: my mom used to make vanilla pudding on the stove. i know she put eggs (whites only), vanilla, sugar, and milk. I know that there was NOT any FLOUR or CORNSTARCH. she passed away and i never got the recipe, she knew it in her head . . . does anyone know of a recipe like this ? ? please help!!

Could it have been a Vanilla Mouse?

Vanilla Mousse Recipe
2/3 cup boiling water
2 envelopes unflavored gelatin
1/2 cup sugar
1 cup canned evaporated skimmed milk
1 teaspoon pure vanilla extract
1/8 teaspoon ground cinnamon
2 cups fresh ice cubes
Fresh berries
Pour water and gelatin into an electric blender. Process on high 30 seconds. Add sugar and process 5 seconds. Add remaining ingredients except fruit and process 1 minutes or until mixture is smooth. Pour into dessert dishes and chill 1 hour. Serve topped with fresh berries.

I'm like you, I can't find a vanilla puddng anywhere without flour or cornstarch.

I use this pudding as the cream for my eclaires and when I make banana pudding.


combine in a med pan 3/4 C sugar&1/2C flour.add to this 3 cups of milk.and stir over a med low heat till the milk is hot....
beat 3 eggs yokes and slowly add 1 cup of the hot milk to the yolks to temper them...then return them to the milk on the stove....continue to stir until it is quite thick...remove from heat ...add 4 T butter and 1 t vanilla


you can adjust the sugar...whenI use it with banana pudding I like the wafers and bananas to add the sweetness.
when I make chocolate pudding I up it to 1 cup sugar and add 1/4 coco powder....
