Here's a very simple white cake - make as a cake or cupcakes. Also, if white is too boring - add a few drops of any food coloring to the batter to make whatever color your daughter chooses. Have fun!

* 1 cup white sugar
* 1/2 cup butter
* 2 eggs
* 2 teaspoons vanilla extract
* 1 1/2 cups all-purpose flour
* 1 3/4 teaspoons baking powder
* 1/2 cup milk

1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x9 inch pan or line a muffin pan with paper liners.
2. In a medium bowl, cream together the sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla. Combine flour and baking powder, add to the creamed mixture and mix well. Finally stir in the milk until batter is smooth. Pour or spoon batter into the prepared pan.
3. Bake for 30 to 40 minutes in the preheated oven. For cupcakes, bake 20 to 25 minutes. Cake is done when it springs back to the touch.

Victoria Sponge
110g (4oz) Butter
110g (4oz) Caster Sugar
110g (4oz) Self-raising Flour
2 Eggs
Vanilla Essence or 1 tsp Grated Lemon Rind

Preheat oven to 190°C: 375°F: Gas 5.
Whisk together the butter and sugar until light and creamy.
Add the beaten eggs gradually with a little of the flour.
Fold in the remaining sieved flour and add the flavouring.
Divide equally between two 15cm (6 inch) sandwich tins.
Bake for 20 - 25 minutes.
Turn out on to a wire rack to cool.

This is a very good simple cake recipe. I have made it many many times and everyone loves it.

AMISH CAKE

1/2 c butter or margarine
2 c brown sugar
2 c sour milk (milk with a little lemon juice sprinkled in it)
2 tsp baking soda
3 c flour
1 tsp vanilla

TOPPING:
6 T butter or margarine
4 T milk
1 c brown sugar
1/2 c nuts (pecans or walnuts - chopped)

Cream the 1/2 c butter and 2 c brown sugar. Add the sour milk with the baking soda. Add flour and vanilla. Bake at 375o for 25-30 minutes or until a toothpick comes out clean. Spread topping on top of the cake, return it to the oven and bake it until it is bubbly (or one minute).

TOPPING: Mix the 6 T butter, milk and 1 c brown sugar. Mix in the nuts. Spread on the cake.

Basic Victoria sponge mix
4 oz sugar,
4oz butter
2 eggs
4 oz Self Raising flour sifted

Heat oven to 180oC, 350oF, Gas Mark 4. Grease an 18 cm (7 inch) sandwich tins
Cream together the sugar and butter until light and fluffy. Add one of the eggs and beat in, adding a little of the flour. Add the other egg and mix until well combined. Then FOLD in the rest of the flour.
You can replace an ounce of the flour with an ounce of cocoa powder for a chocolate cake. Place in prepared tins and bake for 20-25 minutes in 2 tins or 40-45 minutes in one tin.

TIP I always put a little water in an oven proof dish in the oven as it keeps the cake lovely and moist.

Apple Cake
apples peeled & sliced 4-5
1/4 cup white sugar & 1 tsp cinnamon mixed for topping later

Ingredients for apple cake
2 eggs
1 tsp vanilla
? cup oil
? cup orange juice
1 cup sugar
1? cups flour
2 tsp baking powder
1/4 tsp salt

Peel and slice apples into a bowl
Beat eggs, sugar and vanilla in a mixing bowl. Mix oil and orange juice together in a measuring cup.
Add to the egg mixture alternately with flour and baking powder.
Beat slowly until smooth. Fold in apple slices to mixed batter and gently stir all together.
Pour mixed batter into greased and floured baking dish.
In a small cup mix sugar and cinnamon for the topping and spoon over apple cake batter before baking.
Bake at 350 degrees F for approximately 45 minutes until an even golden brown.
Do not remove early or cake may be too moist in center.
