Do you need a bamboo sushi rolling mat to make sushi?!

no, but it makes it a lot easier. You can improvise with other rollable stuff. The was paper someone else suggested was a good idea. You could also use a (very clean) stiff placemat.

Not really I have made sushi for years and have improvised more than once. I had the best success with a Tea Towel (not the fluffy kind the heavy cotton flour sack type). Sushi mats are really cheap (about $2.00) at most Asian food suppliers don't attempt to wrap in saran it is a real trick and will frustrate you - instead use a gallon size zip-top bag.
