Hello, have never cooked lamb and have bought four lamb steaks for a guest . See details for rest of question?!

Question: Should I cover with foil as I would prefer to cook in the oven than grill them and should I wrap or just cover (after coating with oil/seasoning)?

Prepare the meat with some olive oil then salt, pepper, garlic powder, rosemary and mint leaves. Just cover the meat to allow the flavors and steam to circulate rather than be trapped in your foil package. You should then remove the cover for part of the cooking time to allow for caramelization on the meat. It gets better flavor that way. Enjoy! Rob R

Much better grilled - you can keep a closer eye on them. They need to be very very slightly pink in the middle when done. And don' coat them in oil - lamb has plenty of its own oil.

Definitely grill or broil them. Here's a good and easy recipe:

Ingredients

* 4 lamb chops
* Lawrys Seasoned salt
* Pepper
* Butter

Directions

1. Place lamb chops on foil with edges folded twice.
2. Sprinkle both sides with Seasoned salt, pepper.
3. Using a butter knife put a tab of real butter on each chop and smear it over entire chop.
4. Don't worry about using to much butter, the extra is poured over the lamb.
5. Place under broiler and cook about 7 minutes per side or until you see the edges getting a good color almost black.
6. The whole top of chop will be bubbling. Just beautiful.
7. When the first side is done,turn chop, smear butter over mixing the salt and pepper on the lamb. Don't worry if the butter runs off, you want some extra when they are done.
8. Cook until the edges on side 2 are blacken.
9. When done, place on plate. Make a "V" in one end of the foil. Very carefully, pick up the tin foil and pour some of the melted butter encrusted with seasoned salt over each chop.
10. When you cut a piece, dredge it in the melted butter. Totally delicious.
11. Most have been brought up to serve with mint jelly.
12. This way you get lucious lamb flavor.
13. Clean up is easy, fold foil, throw away.

better to grill them , not to long though ,they will look,taste and smell better .
