Does anyone know a good pancake recipe?!

Question: My nephew is staying with me, and is at a stage where he will only eat pancakes! He cannot eat blue berries, and doesn't like chocolate chips (odd child, really), I really don't know how to make anything else. Any ideas?

Bisquick pancakes are easy and reliable. The recipe is on the box. We add an extra egg to ours because we prefer the crepey style vs the thick fluffy style. Try this variation on him::
Puffy Apple Pancake
saute 2 peeled sliced apples in 2 tbs butter and add sugar and cinnamon to taste. While apples are still bubbly hot pour in 2 cups of pancake batter to which you've added an extra egg and 2 tbs melted butter - well blended. Put skillet in a preheated 425 degree oven and bake for 20- 25 min until puffy and richly browned. Serve immediately cut into wedges and squeeze lemon juice over all and dust with confectioners sugar.
Kids love this.

try making crepes with a fruit compote....whipped cream and honey. mmmmm

Kids love Jam! Get the kind with no bits and blob a little in the middle of the pancake and tell him to dip his pancake into it.

Failing that try nutella

The Aunt Jemima buttermilk pancake mix in the box is really good and my kids love it. I buy the one you add milk and an egg to when preparing it.

I have a Latte pancake topped with whipped cream recipe and a maple bacon pancake recipe. since i'm writing a cook book, I cant post them up here, but if you email me I would be happy to send them to you.
