Freezing ginger root is fine and the best way to make it last longer. You can peel it and freeze it in small sections in a freezer bag or you can mince it and freeze it. A cool trick is to mince the ginger and use an ice cube tray to freeze it into small portions.

I don't beleive you and freeze the fingers, I think you have to grate it first. Keep the ginger finger out of a bag and in the warmest, least humid spot in your fridge. It should last a week or two.

Just cut it in chunks and put it in a plastic freezer bag. It keeps a long time.

You would probably have to blanch it first? You usually do have to blanch things before freezing.

Slice some into 1/4" slices blanch them, lay them flat and then freeze them. What's the worst that happens, it doesn't work then you toss em out.

You'd probably be better drying it though.

I just researched your question and found a chat website that
suggests preserving fresh ginger root in sherry in the refrigerator. Sounds good and they say that it preserves it for at least six months . They use it up before they have to replace it.
