Haven't eaten in three days?!? Wow. Maybe you should start off with some Jell-O.

But if you want my favorite eggs recipe, here you are!

Scrambled eggs:

3 eggs
1/4 cup of milk


1) Crack the eggs into a bowl. Mix them together with a fork until the yolks have broke open. Then, add the milk.

2) Pour the mixture into a greased frying pan and put it on the stove. Ignite the stove to a low setting.

3) Immediately start pushing the eggs back and forth with a spatula so they don't stick to the pan.

4) Once the eggs turn fluffy and golden, you can optionally add bits of ham, cheese, or salt to them.

5) Scoop the eggs out of the pan to a bowl and enjoy!

Confetti Scramble



4 to 8 servings

? 1 to 1 1/2 cups kernel corn (cut fresh from cobs, thawed frozen or drained canned)
? 1/4 cup chopped green pepper
? 2 tablespoons chopped sweet red pepper or pimiento
? 2 tablespoons chopped onion
? 1 teaspoon to 2 tablespoons butter or cooking oil OR cooking spray
? 8 eggs
? 1/2 cup skim or low-fat milk
? 1/2 teaspoon seasoned salt, optional
? Green and/or sweet red pepper rings, optional

In 10-inch omelet pan or skillet over medium heat or hot coals, cook corn, peppers and onion in butter until tender but not brown, about 5 to 7 minutes. Meanwhile, in large bowl, beat together eggs and milk with salt, if desired, until blended. Pour over vegetables. As mixture begins to set, gently draw an inverted pancake turner completely across bottom and sides of pan, forming large soft curds. Continue until eggs are thickened and no visible liquid egg remains. Do not stir constantly. Garnish with pepper rings, if desired.

BREAKFAST!!!
french bread - mix 2 eggs and about 2 cups of milk 2 gether. dip triangle bread into the mixture and fry until golden brown.

Curried Egg with Beef and Tomato

Serves 1

Ingredients:
2 bread slices

Filling:
1 hard-boiled egg, mashed
1/2 teaspoon curry powder
1 teaspoon milk salt and black pepper to taste
Topping:
1 rare roast beef slice
2-3 tomato slices as required
salad greens


Instructions:
Spread the filling on a slice of bread. Top with beef, tomato slices and salad greens. Top with the other slice of bread. Adjust recipe accordingly to make extra.

Breakfast Pizza
Yield: 6 servings

5 Eggs, beaten
1/4 cup Milk
1 cup Hash browns, precooked
1 cup Breakfast sausage, precooked
1 cup Shredded cheese

Beat 5 eggs together with 1/4 cup milk, set aside.

Press into an iron skillet the contents of one of those tubes of refrigerator of Pillsbury cresent rolls.

Top with:
1 cup precooked (frozen, if you like) hash browns
1 cup crumbled precooked breakfast sausage
1 cup shredded cheese of choice (I like cheddar on this)

Optionally, and in amounts to taste, add chopped onions, chopped bell (or other) peppers, hot sauce and/or salsa, salt and freshly ground black pepper, and/or anything else that you think would be good.

Pour egg mixture evenly over pizza.

Bake in preheated 375 to 400 degree oven about 30 minutes or until done. Check often to avoid burning. Serve immediately.

If you haven't eaten for 3 days, you might want to start eating lightly so you don't get an upset stomach.

If you are set on having eggs, maybe soft boiled would be best as they won't be greasy. Jell-O, cottage cheese, crackers, plain rice, mashed potatoes without a ton of butter, dry toast or toast with light jelly, those would all be good things to eat after a 3 day fast.

I'm glad you are feeling better!

Boil the eggs till done. peel the boiled eggs and slice up the boiled eggs, add mayonaise, mustard, pickle relish, salt & pepper to taste. Spread on bread for an egg salad sandwich.

If your just getting back to food, just scramble them with a bit of milk, take it easy on the stomach until you know how much you can handle.
