Perfect Side?!


Question: I've got a perfect potroast in the crock pot right now and it smells amazing. The problem is I don't have any ideas for a good side dish. I was thinking a nice bruschetta but I used the last of my tomatoes in my chili that I started at noon for lunch tomorrow. What is a fast, tasty side dish that would go well with pot roast? Ease is not a factor, I'll take anything...besides, I'm 16 and if I can do roasts and cater weddings I think I can make a side dish.

A sweet coleslaw and italian rolls. The perfect compliment to the potroast.

What makes a pot roast a pot roast is that your whole meal is in the pot. You should have had potatoes, carrots and such in there. I also use onions and celery. If you like shooms, put those in.

Well, when my mom makes pot roast, she wants some comfort food to go with it.

Usually some white cheddar mashed potatoes, or some extra cheesy macaroni and cheese.

The mashed potatoes would probably be faster, because she baked her mac-and-cheese.

All you do if boil cubed and peeled potatoes until you can put a knife in them with no resistance. Then drain them well, add some butter, salt and pepper, and as much cheese as you want.

You could do it with swiss cheese, or parmesean cheese too if you wanted.

Home made garlic/chive mashed potatoes and a good salad with field greens.

Baked Mushroom Rice

1 cup rice, uncooked
1/2 cup green onions, sliced, including tops
1 tablespoon butter
1/2 pound fresh mushrooms, thinly sliced
1-1/2 cups chicken broth or stock
1/2 cup dry sherry
1 teaspoon salt
1/2 teaspoon freshly-ground black pepper

Preheat oven to 375o

Butter a 7 x 11-inch baking dish and pour in uncooked rice

In a medium saucepan, sauté green onions in butter until softened. Add mushrooms and continue to sauté until mushrooms are softened. Pour in chicken broth, sherry, salt and pepper. Bring to a boil, remove from heat and pour over rice in baking dish.

Cover baking dish, and bake in a 375 oven for 25 to 30 minutes or until rice is done.

Serves 6


Colorful Oven Vegetables

1/3 C. butter
1/2 tsp. dried thyme
1/4 to 1/2 tsp. salt
1/4 tsp. pepper
3 C. cauliflowerets
2 C. broccoli florets
6 medium carrots, julienned
3 small onions, quartered

Place butter in a shallow 3 qt. baking dish; place in a 400o oven for 5 minutes or until melted.

Stir in thyme, salt and pepper. Add the vegetables and toss to coat.

Cover and bake for 25-30 minutes or until vegetables are crisp-tender.

Serves 10-12

a bit of buttered brown rice or a piece of crusty bread

Peas, beans, leek, green leafy vegetables.

For future refrence you can just toss some potatoe pieces and carrots in with the roast and they pick up the flavor and are a delicious vegetable side for potroast. Other than that some garlic mashed potatoes would be good...
