Any beef jerky makers out there?!
Here's my idea: Cut up the meat. Soak it in some water, salt, pepper and worchestershire sauce overnight. Put the meat, along with the liquid in a 200 F degree oven for several hours to make it super-tender. Then put it in the dehydrator until it's dry.
Will baking it on a low temp for a long time like I'm planning really make the meat tender? My biggest worry is a bunch of germs and crud growing on there because of doing that.
My fiance thinks he's the king of making beef jerky and I want to outdo him! :)
Please give any and all suggestions to make the very best beef jerky. Thanks!
Answers: I'm about to attempt it for the first time.

4 lbs beef flank steak or round steaks (1 to 1-1/2 inches thick)
1 teaspoon salt
1 teaspoon liquid smoke (optional)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon chili powder
1/4 teaspoon worcestershire sauce
1/4 cup soy sauce

1Trim all visible fat from meat. Partially freeze. Slice with the grain 1/8 to 1/4 inches wide and 4 to 12 inches long.
2Combine all remaining ingredients. Mix with beef strips. Place in a glass dish; cover and refrigerate 8 hours or overnight.
3Lay beef strips in single layers on oven racks with cookie sheets below.
4Bake at 140° to 150° for 10-15 hours or until they are leathery.Or use a
5commercial dehydrator, following
6manufacturer's directions.
7With a paper towel, blot any drops of oil from the jerky.
8Place in an airtight container and store in the refrigerator or freezer. Yield: 30
I wouldn't put the water in the oven with the jerky, you will only end up getting jerky soup.
Im a fan of sweet baby rays bbq sauce. never tried it but you could try to tenderize the meat in a pressure cooker. then soak in sauce and then in dehydrator.
Bake it in the oven the whole time, but to keep an even temp put a spoon or knife in the door to prop it open a little bit. I found that jerky in the oven is better than the dehydrator.
