I want to make carmels, the recipie calls for sweetened condensed milk. I only have evaporated milk...?!

Is there a substitute for sweetened condensed milk?

The best make-your-own version is to mix 1 cup of evaporated milk with 1-1/4 cups of sugar in a saucepan, heat and stir until the sugar is completely dissolved, and let cool. If you don't have evaporated milk on hand either, you can make your own by slowly simmering any quantity of milk in a pan until it reduced by 60%, and then adding the sugar.

Obviously this is a tedious process. Sweetened condensed milk has a shelf life of about a thousand years*, though, so pick up one or two cans on your next trip to the market and you’ll never need a substitute again (it’s a good idea to turn the can over every two months or so, to keep the sugar well dispersed throughout the milk).

*OK, it's more like two years, but it's still a fairly long time....

If you were going to try that, I'd use light corn syrup, not sugar.
Sugar will probably thin the consistency and you'll just have a goopy mess. If possible, buy the sweetened condensed milk.

I would just buy sweetened, as the sugars will be just right. But you prbablycould just add sugar.

Look for another caramel recipe that calls for evaporated milk.

You definetly need the sweetened condensed milk.
Either that,or get a different recipe.

Nope. Go to the store and get sweetened condensed milk. You can try to add sugar to the evaporated milk, but I don't know how well that's going to work out. Just go to the store. To be on the safe side and have everything come out all right. Caramels, mmmmmm.
