I make homemade soup all the time because its good for you and its easy to make. ESPECIALLY FOR WEEKENDS AND FAMILY DAY

Iam, but only because its Lent and the son's girlfriend doesn't do seafood. I was going to make it last night but they ended up going out. We will have homemade cream of tomato soup and gourmet grilled cheese sandwiches
Nah, I have to work (I work at a hotel) so I was thinking grabbing a rotissery chicken from Winn Dixie on the way home, and tomorrow maybe making something mexican like quesadillas with the leftover chicken.
I love making and eating homemade soups! Not because it's a holiday weekend (at least here it isn't), but just last night I made some vichyssoise (potato and leek soup) -- good hot or cold (I just make it with broth and milk, not cream). Last week I made another soup with peppers, potato, onion, celery, and garlic. Yum!
Another favorite is corn chowder.
I hadn't thought about it, but I probably will now, not because of the holiday weekend but because the weather is rainy and chilly. I like to make vegetable-beef soup with stew meat, a soup bone, 1 can tomatoes, 2-3 peeled/diced potatoes, and a couple of cups of frozen mixed veggies, plus water to cover and salt/pepper to taste. Cook for 2 or more hours to get the meat tender, then remove the bone and serve!
