What's your favorite panini sandwich build?!
Answers: I just posted mine in the sandwich thread so I thought I'd get some other opinions.
COTTO SALAMI PROVOLONE PANINI
4 slices of Ecce Pani bread (roasted garlic flavor)
olive oil to brush on bread
Classico pesto
2 slices Provolone cheese
2 slices of cotto salami (with peppercorns)
baby beef steak tomato sliced
spinach leaves
Preheat Panini Grill.
Assemble Sandwich, brush each slice of bread with olive oil, spread a teaspoon of pesto on each slice of bread.
Assemble sandwich salami first, cheese, slice of tomato and spinach.
Place on Panini grill.
Cooks in about 4-7 minutes.
Serves 2.

i got one of those panini and you know i used that white Italian bread spread it with spaghetti sauce (lightly) layered it with provolone and pepperoni and grilled it with butter in the panini it was excellent!
A delicious mix of chicken, pesto, veggies, and cheese all melted together on flavorful focaccia bread. Simple, fast, and very tasty - a nice change from normal sandwiches.
INGREDIENTS
1 focaccia bread, quartered
1/2 cup prepared basil pesto
1 cup diced cooked chicken
1/2 cup diced green bell pepper
1/4 cup diced red onion
1 cup shredded Monterey Jack cheese
DIRECTIONS
Preheat a panini grill.
Slice each quarter of focaccia bread in half horizontally. Spread each half with pesto. Layer bottom halves with equal amounts chicken, bell pepper, onion, and cheese. Top with remaining focaccia halves, forming 4 sandwiches.
Grill paninis 5 minutes in the preheated grill, or until focaccia bread is golden brown and cheese is melted
Nutella and Bacon
Heres mine, I do this cold and as a panini with out al the veggies in it and less dressing on the sandwich. Feel free to try it if you want to. I dont mind.
Its one I developed but might sound similar to others out there.
Good italian loaf bread" fresh perfered"
Sara Lee sundried tomato Turkey breast wafer thin sliced
roma tomatoes thin sliced and seasoned with olive oil and a bit of salt and pepper
large leaf Basil
red onion thin sliced
roasted red peppers 1 half per sandwich
Garlic Mustard mayo-good deli mustard not the plaine yellow frenches stuff" 1 c mayo to 2 tblsp deli mustard, chopped garlic in olive oil and a bit of red pepper flake 1 small pinch no more"
Cheese of choice for myself is, pepperjack thin sliced or good aged cheddar from WI
Romaine lettuce just the dark green bits the rest is best for salads not sandwiches.
Toast your bread gently to get it goldon but not browned to much
gently spread on both slices a thin but decent layer of your mustardmayo
Add your lettuce on both sides, your turkey, onion, cheese, basil, and tomatoes last, as not to make sandwich soggy if keeping for a bit..
For a hot sandwich, add more cheese and less mayo and toast in toaster oven for 2 mins. For Panini, omit all the vegies you dont want and cut the sandwich dressing again in Half, and prepare as usual. Enjoy from my kitchen to yours
just some really good bread, like foccacia or something, some provolone cheese(any good cheese really) and tomatoes is absolutely amazing, a zesty deli meat adds a nice kick too
Oh wow, I have to pick just one? Ok, then here goes:
Freshly baked Ciabatta bread, lightly drizzled with Olive oil, filled with a marinated chicken breast (Balsamic Vinaigrette marinade, if available) butterflied, then layered with a Roasted Red Pepper, Smoked Mozzarella Cheese, fresh baby spinach leaves and a portabello mushroom cap, (gills removed, seasoned with EVOO, salt and Pepper,baked to a soft touch) a thinly sliced roma tomato would add a layer of luxery, then served with a pesto mayonnaise. Experiment and have fun, Pannini's are wonderful when cleaning out your veggie drawer and cheese leftovers!!!!!! Renee
