What can I replace 1 (12 Ounce) Can of Evaporated Milk With?!

I see no reason why you can't add sour cream or cream cheese...
Or why not,,, say 2 extra eggs...
evap milk is to thicken and enhance the flavor..

there's nothing realy you can use instead of the Evaporated Milk sorry

Try this recipe, very simple and it doesn't call for evaporated milk...

3/4 cup rice
1 3/4 to 2 cups water
1 1/2 quarts milk
3 egg yolks
3/4 cup sugar
1 teaspoon vanilla extract
1/4 cup raisins soaked in water and then well drained

Cook rice in water at slow boil for 5 to 10 minutes to evaporate some water and soften rice. Pour in milk, cook uncovered on low heat until creamy in texture. Stir to avoid sticking. In a bowl, combine eggs and sugar. Remove rice from heat, stir in the egg-sugar mixture. Return the pot to the heat for 4 to 5 minutes. Turn off the heat. Stir in the vanilla and drained raisins.

Evaporated milk is a problem for me, too, since it doesn't exist over here in Italy.

I've found and saved these recipes for substitutes, just in case. Hope they can be helpful for you, too. You need to have some powdered milk on hand, though (this is what would thicken the milk to make it approach "evaporated" consistency).

Evaporated Milk Substitutes

? cup instant nonfat dry milk powder
6 tbsp water

Mix ingredients well.
Equivalent to ? cup canned, evaporated milk.

1? cups warm water
1 cup powdered milk
2 tbsp butter

Mix powdered milk and warm water together.
Add butter.
In a small pan, heat mixture together.
Beat well, cool, and store in the refrigerator.

Note: Some people added comments to this last one, saying 2 tbsp butter was too much; one said she changed it to 2 tsp, and it worked fine (so the "tbsp" might have been a typo).
