How do I cook a marinated steak in cast iron skillet?!
ANYWAY--we have a new, seasoned, ready to go cast iron skillet and i want to use that.
How do I cook the steak (it's been marinated for a day) in the skillet so it's medium rare?
I have no idea how to tell with meat but I don't want to ask him--it's a surprise!
Answers: I'm surprising my fiancee with a sirloin steak tonight (i'm a vegetarian and he doesn't get to eat steak too much--and he's a meat and potatos guy..)

Need to know the thickness. But to start. Leave the steak out. It should be at room temp when you cook it. Leave out some butter to get soft. You will top the steak with it AFTER you cook it. When ready to make the steak, crank up the broiler. Get your pan hot on the burner. Put a little oil in and sear the steak on both sides for a min. Tehn put under the broiler . 2-3 min a sid efor 1" steak. Take out, put on plate. Dump any juices over steak and top with butter. WAIT A FEW MINUTES TO CUT INTO THE STEAK.
On the stove top, get the skillet just this side of smoking hot. Place the sirloin in (it will sizzle) wait 3 minutes, turn it over and place in a 325 degree oven for 5 minutes. Remove from skillet and let rest for 10 minutes covered loosely with aluminum foil. After the steak rests, cut thinly against the grain and serve.
