Recipe for these potatoes?!


Question: I had these potatoes at a restaurant. The were peeled and slice lengthwise at about 1/4 to 1/2 inch in thickness. They were battered and deep fried. What made them unique is coating was really thick and crispy. Kind of like the batter on fish. Does anyone have a recipe?

you can make a batter like that by mixing equal parts beer and bisquick. it works on just about anything you want to deep fry. my mother in law taught me this. it tastes just like the arthur treachers deep fried fish coating.

Potato Scallops in Beer Batter


Ingredients
225g plain flour
2 medium eggs, separated
220ml lager
750g-1kg Maris Piper, Romano or King Edward potatoes, peeled and cut into 2-3mm slices
1 tsp cream of tartar
Oil, for deep-fat frying
Salt
Sea Salt


Method
Sift the flour and 1 tsp salt into a bowl. Make a well in the centre, add the egg yolks and lager, and whisk until smooth. Heat the oil in a deep fat fryer to 175-180°C.
Just before cooking, place the egg whites and the cream of tartar in a clean bowl and whisk until foamy and stiff. Fold into the batter. Mix the potatoes into the batter, stirring gently until well coated.
Fry the potatoes, in batches of 7-9 slices at a time, for 4-5 minutes. Adjust the heat so that the coating doesn't brown too much before the potatoes have cooked. Drain on kitchen paper, sprinkle with sea salt and serve immediately with garlic mayonnaise.

Ingredients:

3 3/4 pints (2 liters) vegetable oil
2 pounds (950 grams) floury potatoes, like russets, peeled and cut into large chips
1 cup plain flour
1 cup beer
2 egg whites, whipped to soft peaks
Salt

Instructions:

Pour the vegetable oil into a deep pan or fryer and heat to 300 degrees F. Cut the potatoes into slices and rinse; blanch the cut potatoes in the oil until soft, but not colored, about 4 minutes. Remove and drain.

Mix together the flour and the beer, and then fold in whipped egg whites. Turn up the heat of the oil to 350 degrees F. Dip the potatoes in the batter and fry for a few minutes until golden brown. Salt to taste and enjoy!
