Chewy Chocolate Chip Oatmeal Cookies
INGREDIENTS
1 cup butter, softened
1 cup packed light brown sugar
1/2 cup white sugar
2 eggs
2 teaspoons vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon salt
3 cups quick-cooking oats
1 cup chopped walnuts
1 cup semisweet chocolate chips
DIRECTIONS
Preheat the oven to 325 degrees F (165 degrees C).
In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in eggs one at a time, then stir in vanilla. Combine the flour, baking soda, and salt; stir into the creamed mixture until just blended. Mix in the quick oats, walnuts, and chocolate chips. Drop by heaping spoonfuls onto ungreased baking sheets.
Bake for 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

1 stick (4 oz) unsalted butter, softened
1/2 cup plus 2 tablespoons brown sugar, packed
1/4 cup granulated sugar
2 large eggs
1 tablespoon milk
1 teaspoon vanilla
3/4 cup plus 2 tablespoons flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups rolled oats
1 cup semi-sweet chocolate chips
3/4 cup toasted pecans
1/2 cup shredded coconut
Preheat oven to 375 degrees F or 350 degrees if you’d like softer cookies.
In a large bowl, cream together the butter, brown sugar and granulated sugar until smooth. Beat in the eggs one at a time, then stir in the milk and vanilla. Combine the flour, baking soda and salt; stir into the sugar mixture until well blended. Stir in the oats, chocolate chips, pecans and coconut until evenly distributed. Drop by rounded tablespoons onto ungreased cookie sheet.
Bake 10 to 12 minutes in the preheated oven for a chewy cookie or 14 minutes for a firmer cookie.
Cool for 1 minute on the cookie sheet and then remove to wire rack. Cool completely and then store in tightly sealed container.
To toast pecans: The best way is to lay them on a cookie sheet and bake them at 350 for about 8-10 minutes or until they start to smell good. A quicker way is to lay them on a paper towel and microwave them for 2 to 2 1/2 minutes, stopping halfway through to shuffle them around a bit. Let them cool and crisp before cutting. Micro-toasting is a real energy saver, but the pecans don’t toast as evenly. Not that it matters. Micro-toasting is better than doing nothing at all.
Chewier than quick cooking oat kind and with coconut. Add walnut too if you like

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, cream together the shortening, margarine, white sugar and brown sugar until smooth. Beat in the eggs one at a time, then stir in the peanut butter and vanilla. Combine the flour, cocoa, baking powder, baking soda and cream of tartar; stir into the sugar mixture. Mix in the oats, walnuts (if desired) and chocolate chips. Drop by rounded spoonfuls onto the prepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely
These are amazing!.... the trick is putting the oatmeal in a food processor!!!!

Directions
1. Place oatmeal in a food processor and blend into a fine powder.
2. Cream butter, sugars, eggs and vanilla.
3. Add flour, oatmeal, salt, baking powder and baking soda to butter/sugar mixture. Mix well.
4. Add in Chocolate chips, grated chocolate and nuts. Mix until all ingredients are well combined.
5. Roll into balls and place 2 inches apart on an ungreased cookie sheet. Don't press down!
6. Bake 10 to 12 minutes at 375'.

Here is a recipe for big soft cookies-- they are meaty but not oily, and definitely not flat or crunchy.
2 1/4 cups flour
1 tsp. baking powder
1 (3 1/4-ounce) package vanilla instant pudding
1 tsp. cinnamon (I use a little more)
1/2 tsp. nutmeg
1/2 tsp. salt
1/2 cup shortening
1/2 cup unsalted butter, room temperature
3/4 cup sugar
3/4 cup dark brown sugar, firmly packed
2 eggs
1 Tbsp. vanilla extract
1 tsp. water
1 cup quick oats
1 (12-ounce) package chocolate chips (or butterscotch or whatever)
chopped nuts (optional)
Preheat oven to 375 F. Grease cookies sheet(s).
In medium bowl, combine flour, baking powder, pudding, spices, and salt.
In large bowl, beat shortening and butter until light. Add sugars and beat until fluffy. Add eggs one at a time, mixing well. Stir in vanilla extract and water. Slowly add the dry mixture, combining completely. Stir in oats, chocolate chips (and nuts if desired).
Drop by large spoonfuls (about 3 Tbsp. each-- don't try to make these cookies small) onto cookie sheet.
Bake about 12 minutes at 375 until tops are lightly brown and look dry. Do not overbake! They continue to cook out of the oven. Cool cookies 5 minutes on sheet, then transfer to rack.
Makes about 50 cookies

thought I'd give you this recipe cuz they are 'divine' there are no chips in the recipe, but you could add some to it.
Sunny oatmeal cookies
1 1/2 c Whole wheat flour
2/3 c Sugar
1 ts Baking soda
1/4 ts Salt
1/2 ts Ginger
1/2 ts Cinnamon
1/2 c Butter or margarine softened
1 Egg
1/4 c Sweet molasses
3/4 c Rolled oats
1/2 c Sunflower seeds
Instructions:
Cream butter egg and molasses. Sift together flour sugar soda salt and spices. Add flour mixture into egg mixture. Beat until smooth. Add rolled oats and sunflower seeds and stir well. Drop from tablespoon onto greased cookie sheet about 3 inches apart. Bake at 350 F for 8-10 minutes.
