What is the best way to slice raw beef tenderloin very thin?!


Question: Hi. I need very thin beef to be cooked fondue style, but can't get to a butcher and need to do it myself. Any tips or tricks?

Definitely freeze it until it's semi solid, make sure it's as solid as you can get it, but it still allows you to slice through.

Then with an exceptionally sharp knife, slowly slice the semi-frozen beef into thin slices. Make sure you cut ACROSS the grain of the meat - this will ensure that the slices of meat are tender and not chewy/sinewy.

Freeze it slightly - it will hold together much better for slicing.
